Rice with Pigeon Peas SABOR with Love style! Here is the list of ingredients that you'll need to prepare this rice:
Ingredientes/Ingredients:
• 3 tazas de arroz grano mediano/ 3 cups od medium grain rice
• 2 ½ tazas (aproximadamente) caldo de pollo bajo en sodio/ 2 ½ cups (approximately) of low sodium chicken stock
• 1 lata de gandules (usar sin el liquido)/ 1 can of pigeon peas (use without the liquid)
• 1/2 taza de jamón de cocinar picado/ 1/2 cup diced cooking ham
• 3 cdas de sofrito/3 tbsp sofrito (sofrito video: fb.watch/9oieiPSluS/ )
• 2 cdas aceitunas verdes picadas o enteras/ 2 tbsp chopped or whole green olives
• 1 cda ajo fresco/ 1 tbsp fresh garlic
• 2 cdas pimientos morrones picados/ 2 tbsp chopped roasted red peppers
• 1 ½ cda de cubito de pollo/ 1 ½ tbsp chicken bouillon
• 1/4 cdta de comino en polvo/ 1/4 tsp ground cumin
•1 cda (aproximadamente) sazon sin MSG/ 1 tbsp (approximately) sazon no MSG (Yo uso/ I use Badia Sazon Tropical)
• 2 hojas de recao/ 2 culantro leaves
• Aceite vegetal/ Vegetable oil
*Temperatura durante la primera parte de cocción: fuego mediano (temperatura 4 a 5 en estufa eléctrica)
Segunda parte de cocción: fuego bajo mediano (temperatura 2 a 3 en estufa eléctrica)*

Second part of cooking: low medium heat (temperature 2 to 3 on electric stove) *

Just to let you know my grandmother, born 1898 in Humacao taught me how to cook, old 74 year old man and your video is the first time I have seen the rice made the way my grandma did. The magic was in its simplicity and secret ingredient, love. Any video I start watching I turn off the minute the mention Goya Sason. My grandmother had no idea what that was and I never use it. I sent ur version to many ppl . I always since 1960's use pork shoulder or Boston B. Preference was always shoulder. Cause that how old school fams did from PR n Calif. Most All RIP n the mucho extensions n more extensions from Mg side n RIP Hub side made it n used only achoite oil made with the seeds. no pkgs n nk adobo.back then only fresh peppers onions garlic lil cumin n oregano n grn or blk olives cause kids prefer blk over grn. medium grain rice etc n nk it was Delicia Riquisimo. The Pastels of pork or chicken or spareribs were bomb n they'd make by hand all with string n pastel paper 300-350 n were never sold. It's amazing! Nk

Chef, I made your recipe last year and this year, I only changed a few things like not using pieces of ham. I use the ham powder instead, no olives and I added extra garlic. But I followed your recipe and it was fantastic!!!! The rice was so flavorful so fluffy super Duper DELICIOUS!!!! delicious & very flavorful!!! One thing we all do is to add the liquid in last after sauteing spices, gandules, then add the rice. It makes more sense the way you do it. I will try it. Thanks from one Bori to another.

I use this recipe, but make mine vegetarian. It may be vegan, I’m not sure. Instead of the ham, I marinate pieces of extra firm tofu with Badia ham flavoring (the flavoring is vegan). Then I use low sodium vegetable stock, and vegetable bouillon. I served it to my family of meat eaters and they never knew the difference. Now I can join them in enjoying it, and I’m not the Puerto Rican in the family… I married into it! 🇵🇷

Chef nuestros platos han sido galardonados en el Caribe por su sabor, apariencia, consistencia y visión. Por otro lado para hacer Arroz con Gandules Apastelado, rallar el plátano y echarlo cuando está el arroz y tapar con las hojas de plátano.Observe que lava el arroz, en mi caso yo siempre lavo el arroz. Un pariente trabajo de supervisor en la planta de arroz, empaque y nos recomendó lavar el arroz por cierto lo que se le hecha para conservación el grano en los empaques. Es a discreción el que lo quiera hacer. Después que tenga manos limpias, área organizada/limpia e ingredientes completos y cocinar con amor 💖todo quedará bien bueno y gustoso😋Buen Provecho,😃
