How to Make Sauce au Poivre (Pepper Sauce) for Steak

  • Steak with black pepper sauce is a perennial bistro favourite, but that doesn't mean you can't recreate it at home.
    INGREDIENTS
    • 1 Tbsp olive oil
    • 30 g butter
    • 4 shallots, finely diced
    • 1 large clove garlic, finely diced
    • 1 heaped Tbsp freshly cracked black pepper
    • 2 Tbsp brandy
    • 250 ml beef stock
    • 250 ml cream
    • Salt, to taste
    • 2 x 300 g steaks, cooked to your liking and rested

    Just made this again for the family - best peppercorn sauce I’ve tasted. Combined with medium rare fillet steaks, frites, green beans and carrots - you have one of the best homemade meals! Have been using this recipe for years and will continue to for many more! Merci Manu! 👨‍🍳👌

    I have been making this recipe for a few years and I still find myself watching this video every so often. I like to make it with chicken stock and serve the sauce on the side to pour it over top of the steak and whatever side I make.

      Yeah I was thinking the same one day , must be epic as . I had them at a French restaurant with my rich uncle when I was a teen . I was like god dam . Still hard to beat fresh home kill lamb . We had a farm when I was a kid here in NZ . The food was so amazing compared most the crap I eat now . Dad would cook all the organs and say try this , it would be brains heart and kidneys , oddly enough wasn't too bad lol . He was no Chef tho , I'd smoke him any day of the week in the kitchen if he was still alive .

    My father was a chief and good one, I remember him telling me a story about his friend John who was also a chief knew the game very well.
    John got a Job in a Hotel in England when he was in his 40s and one day a man came to the kitchen door to thank John the lovely meal that they had and during the conversation the guy asked him out of the blue, he said, what are you worth here chief ? John was a bit surprised but he didn’t show it, and he answered him saying I’m worth a £100 a day and the guy looked at him surprised 😯 then he continued and finished the sentence saying, but I’m only getting 60 😂. Good stuff Manu! And brings back very good memories!

    I didn't have brandy so I used whiskey which taste the same. It came out delicious, thank you chef! My husband and I ate the big 72 hours sous vide super tender chuck steak. Chuck steak ($15) is a very cheap tough meat but after I sous vide it, it tasted like an expensive $50 steak!

    Thank you so much! The sauce came out truly fantastic. Although I did get stuck at the cracked pepper bit. I had no idea you couldn't buy it. I ended up twating some pepper corns with my DIY hammer. But all ended well and easily on par with any decent restaurant I've been to. Cheers again!

    The French restaurant about 10 miles from me made this for take-out during Covid-19 - it was absolutely delicious even after the return 10 miles to my home.
    I am going to give this a try - I'm 'the wife' - and my beloved would not have eaten this anyway.

    I love that kind of recipes, I will take off brandy and add some ginger, a little bit of mustard and soy sauce, some oregano in final as I love herbs with meat. Thanks for sharing

      that's because he added butter before searing the steak. The moisture in the butter prevents a nice sear. add it at the end after the steak is seared

      He seared one side alright ( presentation side). The other was missing any. You could tell this guy teachs cooking and doesn't have to deal with cooking in the industry(anymore). All basic lessons for amature cooks.

      actually its because the meat ''wrinkles'' ( I dont know if its that word in english), so the meat was not all in contact with the pan. To Prevent this you have to make a vestival cut on edges of the steak

      lucas8265 steak looks horrid. Needs much less oil, pref rub steak with oil not the pan, then if wants butter, add at the end to glaze with some rosemary. Gets a deep rich crust. And 2-3 mins for medium rare isn’t long enough imo. Need big thick steak so can cook longer. 😍😍

      i am almost positively sure thats not a nonstick skillet
      A. he is french
      B. he is a cook
      i am almost positive that is a Le Creuset cast iron skillet. hence a frenchman. Le Creuset cast iron is enameled on the outside. also, any cook worth their salt wouldnt sear a steak in a non stick pan. searing takes high heat which destroys non stick surfaces. if u watch youtubes on steaks in non stick pans, they turn the steaks over constantly, because they dont sear well. non stick does not heat as evenly as cast iron or stainless steel heavy bottoms. so please dont worry. its unfounded.

    I make an incredible Steak Au Poivre and there are so many problems with this recipes/technique I can't even mention them all.
    To name a few, what were those cheap thin steaks. I think tenderloin or NY strip is the cut best for Steak Au Poivre. And why is he not using a cast iron pan. His steaks curled up because of his choice of cut, pan, and pan temperature. Also, you can't just use any brandy, you need to use a quality Cognac. And most importantly, you completely coat the steak in peppercorns before you cook it. That's SOP 101.
    Anyone looking for a good recipe to use as a start can search Food Network for Alton Browns version. I made his version for my first SOP attempts and it was top notch.

    lovely! Grilling a steak was something ive been wanting to learn for ages and im happy and proud that I was finally able to do so!...the only thing i wanted to learn to complete that recipe was how to make a nice steak sauce!     So searing without touching or flipping the steak is completely preference. If you don't touch the steak, it gives it a harder sear, which works for some people but I don't like that. I prefer a golden crust, but not one that feels hard. You can just flip your steak as many times as you want. What you do need is relatively high heat and basting butter over and over will give you that golden exterior. Also, dry your steak completely before you put it in the pan. If you've dried it, then salt it and leave it for a couple minutes, the salt will draw the moisture out and make the steak wet again. Make sure you dry it again right before you put it in the pan. As you can see in the video, the steak as a lot of greys because it was wet when you put it in. Not a problem since basting it with butter will still make it golden, but it still helps to dry your steak right before putting it in the pan.

    I have tried this with most cuts and I've got to say even the cheapest blade steak comes out nice. Just depends on how much you want to chew and how much money there is for lunch ;)

    I substituted Calvados for the brandy (basically it is an apple-based brandy). Turned out very good indeed. I winced a bit when you cut the steak in the pan though. Disastrous for a "non stick" surface (it does get a bit softer when hot) and not very good for cast iron either as it scratches through the "seasoned" surface.

      Real chefs don't use "non-stick" pans. And you can always "re-season" a cast iron skillet.
