That was a great fast paced summary, tawny port with pretzels will be on my menu ASAP. We found an unexpected pairing of a Big Mac with a Chardonnay the other day which really accentuated the richness of that creamy cheese on burger. Love the content, keep it coming!

What kind of win go's with breakfast. Such as 🥚 and toast and bacon
Great question! There's a reason mimosas are so popular: bubbles are a good choice with breakfast. Anything fried goes great with Champagne (fried bacon, fried potatoes, fried eggs, etc). If it's sweet (pancakes/waffles/french toast) you need a sweet wine; a demi-sec champagne or off dry Prosecco or even an ice wine if you wanted to get crazy! For spicy breakfast (Mexican) a fruity red like Beaujolais or an off dry white like Riesling!

What could you use instead of moscato- it’s just toooooooo sweet
Good off-dry German Riesling is a great alternative!
What about lean, low acid meats such as Turkey?
Lighter reds like Pinot Noir or richer whites would also work!
Question: you say fat likes acid and tannin but white wines have high acidity / low tannin while full bodied red wines have lower acidity / higher tannin, which would make me assume that the two rules contradict each other, so what would you say is most important to consider when making a food pairing?
For sure. So you actually don’t need both, you need one or the other. Acid is better; it’s more versatile and cuts through fat. a red wine with acid (Pinot Noir) can pair with most anything. A red wine with tannin works really well with fat, because it changes the structure of the wine and softens the tannin. Also, some tannic wines can have solid acidity; think Nebbiolo or Bordeaux. 👍
I made shrimp scampi yesterday and paired it with Pinot Grigio after researching it. Any other suggestions?
PG is actually perfect! Other northern Italian whites like Vermentino would also work!

I am just wondering why you didnt mention about the bitter ingredients in food and wine combination?
Tshering Dema Usually bitter in wine is viewed as the same thing as “tannin”, so those same principles would apply! This is just an overview, but we get into more specific pairings in our episodes! 😃
Which wine could you pair calamari with?
Fried would be hard to beat with some form of sparkling wine! But you could also go light, high-acid white like Albarino or Muscadet or Sauv Blanc. Grilled with roasted peppers? I'd say light, chillable red like Beaujolais!
I don´t get oysters and champagne. I far prefer them with albarino. The length and body with high salinity in the wine is utterly brilliant and a version like Comtesse with serious lees ageing has the exact level of creaminess you need.

You never mentioned the aspect of bitterness
In wine, bitterness and tannin are very similar so I would use the tannin rules 👍

Always Have Wine as sweet or sweeter with your food or else wine till taste sour
