I just canned this recipe instead of putting in the fridge - I have a lot of grown kids who can eat a whole jar in one sitting and I need simple foods on the shelf for them. My kitchen smells amazing! I have 21 quarts finished, tomorrow will be another 21 :) Now to go see what else he posted on his channel. I'm glad his family kept the channel going, I love seeing the legacy of those who are gone. He is still inspiring and helping others create delicious food and that is a beautiful thing.
I have lived in Nashville my whole life and I remember seeing him live at the taping of Ralph Emery show at Opryland with shotgun red at night with my mom and loved shotgun red, then got older and watched his cooking, amazing how much good southern food a man from Minnesota could make lol just playing but thanks and rest in peace my friend, we sure loved you hear in Nashville.

Ok...I made these and let them sit in the fridge (once they cooled) for 5 days. I put a couple ounces of red wine in each batch of brine. I didn't have the same wine as Shotgun Red used but the brine turned out really nice. I tried the pickled hotdogs for the first time this morning. ABSOLUTELY DELICIOUS as were the onions that were added. These are going to be savored while I watch my football games when the boys come over. Add a couple beers...and a bowl of crackers...awesome.
