    Beef pepper steak- a popular stir fry all over the world. The technique I'm sharing will guarantee the beef turns out amazingly tender- no matter what cut of beef you're using. It will taste like very high-quality beef. Stop ordering this dish from your local takeout and make your friend and family a nice meal! It only takes around 10 minutes after you marinate it- it's so easy!

    *ALL INGREDIENTS FOR THE BEEF PEPPER STEAK:*
    *FOR THE BEEF MARINADE*
    - 0.5 pound of beef
    - 1 tbsp of light soy sauce [Pearl River Bridge Natural Brewed Light Soy Sauce: geni.us/wABlLXf]
    - 1 tbsp of Chinese cooking wine [Shaoshing Rice Cooking Wine: geni.us/3hdHAM]
    - some freshly ground pepper
    - 1/4 tsp of baking soda.
    - 1 tsp of cornstarch
    *FOR THE PEPPER STEAK SAUCE*
    - 1 tbsp of oyster sauce [1æ±€ćŒ™èšæČč] [Lee Kum Kee Panda Brand oyster sauce: geni.us/P0u6]
    - 1 tbsp of light soy sauce [1æ±€ćŒ™ç”ŸæŠœ]
    - 2-3 tbsp of water [2-3æ±€ćŒ™æ°Ž]
    - 1 tsp of corn starch [1èŒ¶ćŒ™ç”Ÿçȉ]
    - 1 tsp of sugar [1èŒ¶ćŒ™çł–]
    - 1 tsp of freshly ground black pepper [1èŒ¶ćŒ™æ–°éČœçš„é»‘èƒĄæ€’]
    - Some salt to taste. [äž€ć°æ’źç›]
    *VEGETABLES FOR STIR FRY*
    - some green and red pepper
    - some onion slices
    - 1 tbsp of minced garlic.
    *HOW TO MAKE BEEF PEPPER STEAK STIR FRY*
    -First, cut your beef into thin slices.
    -Marinate it with 1 tbsp of light soy sauce and 1 tbsp of Chinese cooking wine, you can use regular rice wine too. Some freshly ground pepper, 1/4 tsp of baking soda, 1.5 tsp of corn starch
    - Set your beef aside for at least 30 minutes. While waiting we can make the sauce.
    - 1 tbsp of oyster sauce, 1 tbsp of light soy sauce, 1/4 cup of water, 1 tsp of corn starch, 1 tsp of sugar, 1 tsp of freshly ground black pepper and some salt to taste. Because soy sauce already has a lot of sodium, don’t put a lot. Just a little pinch should be fine.
    - For the vegetables, I prepared some green and red pepper cut into big chunks. Some onion and 1 tbsp of minced garlic.
    - Heat up your wok on the highest level possible for 10 seconds and add about 1 tbsp of vegetable oil. Add in your beef. Let the beef fry for 15-20 seconds on each side. Keep turning IT every 15 seconds until the beef becomes brown. Take it out and set it aside.
    - Add about 1 tbsp more oil into the same wok and throw in all your vegetables. Stir fry this for about 2 minutes.
    - When you see the onion becoming transparent turn the heat to low. Add the beef back into the wok along with the sauce. Mix it quickly. Soon you will see the sauce getting thicker. Turn it off. Take it out and you are done.

    Love that you explain things. I learned two things today: baking soda tenderizes meat and I should add the cornstarch to a marinated meat after all it has absorbed the liquid to seal it.

    Made this and it was so easy. I prepped everything ahead of time. I even made up the sauce and put it into a pint mason jar with a lid and left it on my kitchen counter. When I got ready to use the sauce I shook it up and then poured it into the vegetables and beef. This was absolutely delicious served over rice.

    I made this recipe today and it was amazing! I only used the marinade for the beef (I already had a black pepper sauce left in my fridge from last week) The beef came out so amazingly juicy and tender. Using cornstarch and baking soda definetly is a good idea. The dish is very well complemented with big chunks of green pepper and onion. Together with a bowl of basmati rice me and my family had a great dinner. Thank you very much!

    Mandy, I followed your recipe exactly (except made it 3 times the amount), but omitted the added salt (because the Kung Pao Chicken was a little too salty), and it was WONDERFUL! The beef I used was top loin, and I put it in the freezer for about 20 minutes to firm up to make it easier to cut very thin slices. My wife loved it too, and especially loved the sauce. We have several Asian markets in our uniiversity town of Bloomington, Indiana, so it is fairly easy to find ingredients. The problem is finding high quality ingredients, so I have to discover what brands are good and what are not. You are a great teacher and inspiration! èŹèŹ

    Another great recipe. You cut the meat across the fibers instead of in the same direction. That is important to make the meat tender. Your knife skills are very good.
