At 165°F, all bacteria in the chicken is killed. However, at 160°F, Bacteria takes over 14 seconds to be killed, as long as it's at that temp. He probably let it rest for a short while to let the bacteria die off.
You’re actually supposed to cook a whole bird to 185 for it to be properly done. I would like to have seen what this chicken looked like cut into the thickest part. However like regular chicken breast, 165 is recommended. What sucks with white meat chicken breast, is any over that and it’s basically ruined. Then you have thighs and legs, which get better the longer you cook them. Since they contain collagen. Which breaks down at higher temps and makes the chicken juicy. Cook thighs to 185 and they’re amazing with a nice crispy skin. Cook them to 165 though? Yuck. They’re all rubbery and nasty. I wonder if that’s why most people don’t like chicken thighs. They don’t know the secret.
