    Living in zone 3 on the Canadian Prairies presents unique challenges for homesteading and herbalism. The harsh climate, dry and nutrient-poor soil, and risk of drought are just a few of the obstacles we face. However, we have found ways to adapt, using new technologies, crop genetics, and gardening techniques. We also source plants from other regions and dry and store them for future use. We are excited to share these tips and techniques with you.
    We are inspired by our grandfather, who taught us the value of determination and the importance of living in harmony with nature. His love for gardening and herbalism has stayed with us throughout our lives, and we are honored to carry on his legacy.

    Had no idea about how timing is important.
    Not a fan of Sauerkraut but I haven't tried since I was a kid, might have to try it again !!

    Funny story - my dad moved into a new property and noticed some little shiny resin-looking drops on his pick up truck hood. He looked up and saw the neighbour's maple tree. He takes his finger and samples one of those drops and exclaims "it's maple syrup!" Next thing you know, he's pounding a tap into the neighbour's tree (it was so big it grew a little across the property line). Every year, he tapped that tree unbeknownst to anybody except our family. I don't think it was a sugar maple here on Vancouver Island (he lived in Duncan). It was probably a big leaf maple. We have two of them on our property in Victoria, but we don't get cold enough overnights and swings in temperatures for the syrup to run.
