    Learn how to make this Egyptian Dish Koshari also known as Kushari with Chef Varun Inamdar.
    Kushari or Koshari is originated in Egypt. It is an Egyptian dish. It may be prepared at home and is also served at roadside stalls and restaurants all over Egypt. This is a vegetarian dish that consists of rice, macaroni pasta, chickpeas, lentils, fried onion, lentils.
    Ingredients:
    For Spice Mix:
    - 1 tbsp Cumin Seed Powder
    - 1 tbsp Red Chilli Powder
    - 1 tbsp Sweet Paprika Powder
    - 1 tbsp Coriander Powder
    - Nutmeg (grated)
    - Black Pepper
    For Sauce:
    - 2 tbsp Olive Oil
    - 1 Cinnamon Stick
    - 1 Bay Leaf
    - 3-4 Garlic Cloves (grated)
    - 1 Onion (chopped)
    - Salt
    - 2 cups Tomato Puree
    - 2 cups Water
    - Salt
    - 1 cup Basmati Rice (soaked)
    - 1 tbsp Olive Oil
    - 1/2 cup Macroni Pasta (boiled)
    - 1/2 cup Sprouted Masoor (boiled)
    - 1/2 cup Chickpeas (boiled)
    - 1/2 cup Fried Onions

      @@breakdown7553 I know this is very late, but I just saw the comment today, anyways, the rice used is basmati, traditionally we would use Egyptian rice instead, cooked in ghee, water and salt and nothing more, the tomato sauce is much lighter than the one used here it should be almost watery, and the also missed the Daqa and Shatta, which are two sauces that are lightly added to the final mix, the first is made by mixing garlic, cumin and vinegar and a little bit of water, bring everything to a boil and then you are done, the second is mixing tomato puree, lots of chili powder (I MEAN A LOT) and oil, along with water, bring to a boil and then you are done, in conclusion the rice was totally off and the sauce is a bit thicker than the usual, other than that, the pasta, lentils, chickpeas, and fried onions were pretty much on point

    hello chef, From a real egyptian, This isn't the KOSHARI we know.
    It's a kind of Indian version of koshari may be with buryani rice instead :)
    our rice color of koshari is brown with a smaller grain size
    anyhow it'd be great to try another version of the same traditions. Well done.

      I am from India. But I have lived in Egypt for a while. I agree that this koshari is a little different. But still, looks tasty. I remember my time in Egypt now. Especially the visits to Abou Tarek's legendary koshari place.

    I miss Egypt so much! ❤️🇪🇬 Beautiful people, very kind and helpful! I visited alone and I met the nicest people! They invited me out for breakfast every day, and then had an evening meal together too! Usually breakfast was Koshari and I became obsessed with it! I was invited to one of their houses and their mother made me a beautiful meal, which was all vegan friendly!! So kind and thoughtful, I can't wait to go back!!

    I made the tomato sauce and served it with boiled macaroni, to which I had added the remaining spice mix. That itself is mouth watering. Thank you for this. It's a dish I believe will optimize itself to different permutations & combinations.

    my friend that is not Kushary you made few steps that will make the flaver way deferent from our original kushary
    1- mixing the spices is not the thing that gives it the taste
    2- we Egyptions don't use sinnabon in that meal and here is how you should have been done the souce as the same amount (4 pcs of garlic with big spoon of coriander and little bit of salt gose to oil after 5 seconds you should add the onion for sometime then add tomato maybe after that you can add some cumin and pepper final touch is small spoon of viniger)
    3- we do not use basmati rice and if you use it then it should be cocked in check peas boiling water and should include thin pasta we call (sha'erya)
    4- final thing kushary also have spagitty as a layer cutted into small pcs.
    5- fried onion should be dry onion or at least put it in white flower before frying it to be dry and crunchy

    hello chef, im an egyptian and i do not call this koshary. we dont use black pepper OR coriander OR parika..and we make it with egyptian rice. the rice is usually mixed with the lentils half way through. for the sauce we use tomato paste (or just tomatoes) , salt, cumin, chilli pwder (optional) , garlic, and finally vinegar! we also have a sauce on the side called da'aa which consists of vinegar, cumin, and garlic! we also have chilli oil on the side which i personally make from onion oil.

    We don’t use basmati rice in egyptian koshari we use the small egyptian rice and we cook it differently also my tip is better to use the oil of the fried onion to add to the tomato sauce

    Need to add white vinegar in the red sauce to get the tangry koshari taste and also to prepair ducca: the spicy chili liquid with alot of vinegar, garlic and cumin. I think vinegar is so important in Koshari 😅
