Sans rival I Filipino Cashew Dacquoise Layered Dessert I I Marisyu

  • Elegant sans rival layered cake into a rustic Christmas tree form. This much loved nutty meringue dessert is Filipinos' version of French's dacquoise where cashew nuts are incorporated. Ten different meringue cookie sizes are stacked with French buttercream and crushed cashews in between to form a cone shape that would look like a tree. Then garnished with raspberries and mint leaves to complete that Christmas effect.
    Ingredients:
    Nutty Meringue
    6 egg whites (2/3 cup)
    3/4 c caster sugar
    1 tsp vinegar
    1 cup toasted cashews in flour form
    French Buttercream
    6 egg yolks
    1 tbsp water
    1/2 tsp kosher salt
    1 tsp vanilla
    1/2 cup toasted sugar or caster sugar
    1 cup softened unsalted butter
    Garnishing
    raspberries
    mint leaves
    icing sugar for snow like effect
