Instead of green split peas I use a (half) packet of Soup Mix. It has various coloured split peas; black, borlotti and red beans; pearl barley; lentils. Soup doesn’t have the green colour but lots of flavour and probably a bigger range of protein and vitamins.

Sometimes we can't get a ham hock only smoked bacon offcuts, then we need to add a chicken stock cube to boost the flavour.
Love the idea of fresh peas too. I would appreciate no music so I can focus on hearing the recipe.
Would you not put the bone back in with the ham and then remove it later to maximize the flavor from it?
Celery instead of garlic, a hock and bacon bones., sweat veges first. Add cubed potatoes 2/3 rds through.
