    In the early morning hours, on side streets and street corners, Hanoi's hard-working cooks begin setting up their pho stations. A soup, a meal, a national treasure-pho is a widespread addiction. Many Vietnamese start the day with a steaming bowl of this divine noodle soup. The essence of pho is a beefy consommé flavored with charred onions and ginger, rock sugar and star anise.

    Over the last 3 years Pho has absolutely exploded in popularity in Moscow. Its all over the place. And no wonder. This broth speaks warm words of love to your heart. I consider myself an addict for years now. Also being a huge soup lover, I could literally eat this every day

    Thank you for the video. I am from a family of northern Vietnamese and my ancestral family was from Hanoi. Cooking and the history of cooking is my passion. I would like to share something about pho that many people do not know. Pho is from north Vietnam. We never put sugar into our pho broth in beef or chicken pho (hoisin sauce will sweeten your broth). Chicken pho was actually a much more luxury food. Chicken and chicken eggs were one of the most expensive food a Vietnamese can eat so in Vietnam back before the 80s, to top a bowl of pho with a poached egg was like putting caviar on your toast. ALSO, the reason why sugar was added in the south is that many south Vietnamese dish incorporate sugar into their cooking. During the war, food was scarce so to stretch a pot of pho broth, people started to put sugar and a whole daikon into their broth and even dried squid to add a sweetness to the broth to mask the lack of beef bones and meat. Because of that, many people cook pho different ways. However, a true bowl of pho should never have sugar added.

    Being of Vietnamese decent, this is my comfort food. I have and can eat it everyday. I sometimes eat it as breakfast, lunch and dinner.

    I dearly miss a restaurant I would visit every chance I could. They changed over the years because of popularity, but in the beginning they would simmer their broth for 3 days. It was so incredible, I never looked back and loved Asian food since. I miss that place. You can never go home again.

    My Mom use to own Pho Restaurant in Viet nam we use that much spices for a very very big pot of soup for about 300 bowls of soup .

    I have cooked a lot of pho. I have ate a lot of pho. I love it so much that my friends cook it for me for every celebratory / special occasion meal. This is exactly the way that I was taught to make it 25 years ago.

    We have visited Vietnam several times and Pho in Vietnam is just incomparable. Probably, the availability of the local ingredients like fresh herbs and noodles, make the divine noodle soup in Vietnam become exceptionally delicious.

    You just don't know how eager I am to be able to prepare this dish. It is an extreme favorite of mine. I had a tennis partner for 6 years from Vietnam, once he introduced me to this heavenly healthy meal, I at least order out twice a week. 4 times a month. Thank you !

    Pho is the most genius food of all east Asia. Simple ingredients create such complex and comforting flavors, and it's subtle. It's just brilliant! I'd known a Japanese colleague for 5 years and he ate Pho for lunch every single day. But I get that totally. It's just too good.

    My friend introduced me to the Vietnamese cuisine and I became a Pho’s lover. I went to Vietnam last year and I visited every Pho’ restaurant during my stay over there. sorry mom your cook is nice however PHO’ is amazing.

    I love the basil in my Pho but I do not break it up and eat it. I leave the leaves on the stem and let it steep in the bowl and that gives the perfect amount of flavor enhancement for me. You could probably roll the leaves in your hands before putting them in and that would be good also.

    What is especially tasty in this dish, beside the broth, is the bones that after cooking for hours can actually soften so much that the hard bone can be eaten or chewed to squeeze out additional flavor. Then of course there is the gristle and collagen that gets so soft and yummy. I was "involved" in a Vietnamese restaurant in Honolulu in the 1970s.

    absolutely love it 👍. I love how you explain the method in layman's term so that it's easier to follow.
    it's not only about having all the ingredients, but the application and sequence of each ingredient.
    I know that it will take me time to fully understand the process and
    constructing of the dish, but whats important, is trying to do it....

    Every culture has its soup. And so far I haven't had a soup that I didn't like. They always have a delicious broth whether clear or cloudy. From Jamaican chicken foot soup, Japanese udon, Jewish matzah ball, to Vietnamese pho. It's all good!

    The herbs is great especially it assist to settle the gastro-intestine in reduction of acidity due to over consumption of calories in our food.
    At certain age, some people just no longer burn enough calories and having belching and flatulence issue during and also after their meal. So, the herbs really help a lot to prevent that.

    In Vancouver, I wind up eating pho for dinner mostly or lunch on a day off, but it would be awesome if there were places open for breakfast. It would be a nice wintertime breakfast.

    I was going to make pho at home once and went to the store to get some ox tails. I took one look at the price and thought, I could just walk down the street and get a huge bowl for $3.99. And it comes with cream puffs served before the soup!

    The hardest part is cooking the soup, and it's hard to imitate the original flavor from Vietnam. Chef have to boil bones for hours, add ingredients of exact quantity at the right time.

    Very good stuff. Personally, I add the spices for just the last 30 minutes. She's right. If you put it in too early, the flavor becomes muddy.

    I pretty much lived on Chicken pho when I was in Viet Nam. I do not remember sweet. There is a Craftsy class on Vietnamese cooking. I made the pho from her recipe and demonstration it is a bit different from this, but it was just as I remembered eating in Viet Nam. Sugar is used to appeal to American tastes I think.
