Classic Crispy Fried Shallots Guide: Perfect Hành Phi Recipe

  • Fried shallots or Hành Phi in Vietnamese, are very essential ingredient in Vietnamese and other cuisines. They used in soups and on salads and toppings for various dishes.
    The strained oil, called shallot oil, you can keep the oil and it is super fragrant and can be used for fried rice or meat marinates.

    ▶️Ingredients:
    1) 450 g Shallots
    2) 730 ml Vegetable oil ( 3 Cups)
    ▶️Cooking method
    1) Soak shallots in lukewarm water for 30 minutes
    2) After 30 minutes, rinse the water and pour warm water.
    3) Peel the shallots and place them into a clean and dry bowl.
    4) Slice the shallots using a mandolin slicer.
    5) Microwave the shallots for 1 minute.
    6) Keep the pan in medium heat and pour oil.
    7) Dip a chop stick in the oil. Bubbles emerge from the bottom of the chop stick. Wait until the bubbles are rapidly coming out. Then the oil is ready.
    8) Fry the shallots in the oil.
    9) Do not stir for 10 minutes! Shallots will be crispier that way.
    10) After 10 minutes start to stir gently.
    11) Turn off the heat when the shallots turn into pale yellow color. Stir for another 30 seconds.
    12) Take the shallots out while they are golden brown.
    13 )Drain the oil using a strainer.
    14) Lay the shallots on a paper towel and let it cool.
    15) You can store the shallots in an air tight container up to a month.
    16) Save the oil to use for fried rice or marinating.
