My Father gifted me with a set of 3 Arkansas stones almost fifty years ago. Yes you will have to replace them after years of use but two Sons and two Daughters have learned to sharpen everything from kitchen knives to your best Sunday carry. And yes your Daughters need to be able to change the oil and a tire on their cars and carry a knife in their purse or pocket.

Can get a better edge from a $15 dual edge whetstone than a $15 pull through. But one requires much more time and effort.
So "what you can afford" is a gross oversimplification and is exactly why this video exists.

@@m1tthrawnuru0d06 Yep. A cheap whetstone will still give you a far better edge than any electric sharpener or pull through (I'm excluding belt machines like the workshop in "electric", but referring to the crap you use to see hocked on tv years ago).

There’s so many variables with dps , hardness and steel . It all makes for interesting opinions . The bottom line for me is it is easy to sharpen any of the steels after learning what works for each person . I personally like a ceramic rod and a strop for a while after an initial run through a fixed angle sharpener .

Your main point is spot on. Find what works for you and use it. As long as your knife cuts what you need it to, who cares how you got there. A $10 stone, a $1,000 system, had a friend or professional sharpener do it, or used the bottom of a coffee mug or your car window. The only right way, is your way.

It's all a little absurd. How many centuries have people survived without these super steels and fancy sharpeners? Sears and Kephart did just fine with modified butcher knives and no fancy sharpener. Most knife nerds are just collectors who don't even use their knives regularly the way country folk, hunters, and outdoorsmen do and simple hair shaving from a whetstone or field sharpener is more than sufficient to skin and process a deer.

Sharpness is undoubtedly important for cutting performance. However, I think a lot of people (especially ones new to thinking about knives critically) overlook the secondary bevel, flat/concave/convex/asymmetrical grinds, and overall blade thickness. A moderately sharp knife that is thin will slice through cardboard better than a very sharp 1/5" thick knife. Of course, you only learn that after buying many knives from BladeHQ!

I’ve got the work sharp Ken onion edition belt sharpener with blade grinding attachment, it’s a variable speed motor so you can prevent it from getting hot, the blade grinder attachment enables you to sharpen any size blade even lawnmower blades, because it’s a belt sharpener it puts a mirror convex edge on your knife, there’s also a flat section in the back for using it for flat needs, it’s an extremely variable angle adjustment but it gives you an even and perfect convex edge which is the best edge and it’s easy to use.

When I was in middle school a geologist brought rocks into the class, including a large chunk of volcanic glass. By some accident, a flake got chipped off of it, and another kid picked it up and made a slashing motion with it across my upper arm. I didn't feel anything, but after a moment a thin line of blood formed where he had made the motion. He had cut a half-inch deep gash in my arm, and I barely felt it. I never even needed stitches for it. Just adhesive strips were enough for it to heal with barely a line of a scar. Like a damn anime.

I just continually use a strop and that seems to work well, if you never let it get super dull then you don’t have to take it to the stones. To make it even easier i keep a strop on my kitchen counter so if i ever feel the need i can do a few passes to bring it back to sharp. It works pretty well of cooking and edc tasks. Just another option for people take it or leave it up to you🤷‍♂️

Last year I've been using a 800 grit boron carbide 1"x6" stone (under $10) from Amazon and 6 or 3 micro Gunny juice on balsa or 3M Micropore medical tape strops for sharpening/touch ups. About $50 total and the results are amazing. Sharp, aggressive edges that take little time to achieve. My Hapstone system, full sets of Edge Pro diamond matrix, Venev, Shapton and other thousands of dollars in sharpening equipment barely get used for myself anymore. They only see use for reprofiling, a full sharpening ( when touch ups aren't enough anymore), putting on a pretty mirror polish or for customers and friends.
A few weeks ago 8 found the same stone but in 2x8" size and it's probably going to replace most of the freehand stones I use for kitchen knives.

I prefer the clamp style sharpeners, as you can set exact angles and remove most variables. I get what he's saying about having an issue with larger knives, however what I usually do is work in smaller sections and just reclamp the knife as I work. This avoids running the edges out on the extremes of the arc swing. For stones and hand sharpening I prefer DMT diamond stones, they also have a handy hand-held magnetic guided system to use with their mini-folding stones. Lastly, there are angle guides you can buy for stone sharpening, if you want to do hand sharpening, but want a specific angle, and don't want to have to dedicate your life to practice.

    • @BigBear--
      @BigBear-- Před 2 měsíci

I also advise you buying a quality stropping system, they really help with putting finishing touches on your edges. They also tend to help increase the life of an edge by micro-honing the finish. I use specific strops, with specific diamond pastes/sprays.

There are systems where the post travels alongside a track or the clamping jaws rotate, so you're always perpendicular to the blade.
Kitchen knives shouldn't be clamped it, use a edge pro style table attachment to move the knife as you sharpen.
For smaller knives, it's all about how you clamp them.
I almost never have my knife in the center (which is why I don't like the Worksharp systems) and have my clamps of to one side, with the tip being around the middle. That and how you angle it in the clamps, helps keep the bevel width the same.

Because they are junk and he says he’s never gotten a “shaving sharp” edge using one. Honestly for ease of use, for someone with a handful of 3-4” pocket knives, either the 1st one he showed (talking about the curve that it sharpens) is probably the best, tied with the field stone he uses or a triangle sharpener. If you have a lot of kitchen knives I recommend the rolling sharpener. It’s the easiest, takes very little time, and has almost zero learning curve.

I bought the work sharp electric knife and tool sharpener and it works but I was worried about the rapid material removal and I never got an amazing edge from it. It'll be robust from the convex grind the belt gives you but I couldn't get it shaving sharp.
I bought Spyderco's v sharpener next and while being massively more time consuming, I found better edges usually.
I'm thinking about the work sharp fixed angle sharpener next to remove the angle variable from the equation but I'm hesitant that it'll produce any better results than the options I have now. 🤷 Nothing is perfect at the end of the day

My advice is get a good double sided stropp and some 500gritt/35micron and some 1000 grit/18micron diamond paste or emulsion use very light pressure pulling away from the edge and held at about a 25 to 30 degree angle with the blade to stropp surface after using the worksharp to get the knife to the burr point( don't overstropp if after about 6 or 10 stropps per side hasn't got it there it's because you never got the burr on the worksharp), once you get the hang of it you can get another stropp or 2 and go finer yet with the diamond emulsion but much over 1500gritt/12micron is needless for a "working" knife for general use, get the hang of this system and just touching up the edge every so often with the 12 micron and you will only ever need the worksharp if you let it get very badly dulled or damaged,,, you can thank me later

Many sharpening devices remove too much metal. Sharpness is a function of the microscopic serrations on the blade edge.
To achieve these aberrations use sharpener referred to as a steel.
A steel will impart these serrations on a blade in seconds. This method removes very little of the blade metal and leaves an edge that cuts very well.

The day someone invents a sharpener that sharpens a knife by just clamping the knife in the machine and pressing a button is the day the world gets a new billionaire.
Seriously. We need a sharpener that works like a CnC mill. You put it in the machine, you tell it what angle you want or it looks at your knife and it figures the angle out for you and it sharpens it to a mirror polish for you.

All sharpening is up to the person doing it, sharpeners are just a tool in the tool box, they require practice, reps, to get good with, You can sharpen anything with anything that's harder that what you are cutting with. It's in your hands not the tool. Science and Art combine to create almost everything, so don't rely on just one way of doing things. Experiment, pretend that it's fun to get good at stuff..

The tester only shows you how sharp your edge is at that point of the blade.
You will need to flatten whetstones periodically.

When I buy a new knife it just means that I have one more knife that I have to sharpen immediately. Most factory edges leave much to be desired.

Did he mean: A) ‘I sharpen all my knives to 20 degrees’ (probably?), OR B) I use the 20 degree guide for reference then may adjust slightly narrower or wider depending on which knife of mine.’ I’m only asking for clarification…thanks!

    • @BladeHQ
      @BladeHQ  Před 2 měsíci

B! I use the guide for referenced and then adjust slightly for the specific knife. Big choppers get wider, thin folders get narrower, etc. Great question! -George

Diamond plates *_are a type of whetstone!!!_* Remember: Whet≠wet. Whet means to sharpen or prepare. There are Japanese waterstones, western waterstones, splash-and-go stones, oilstones, diamond/CBN plated "stones", and resin/metal bonded diamond/CBN "stones"... These are *_ALL_* whetstones.

For real. In this video I operated under the assumption that we were talking about truly dull knives, but the reality is like you said. If you take a couple minutes every once in a while and tune up your edge, you can go far longer between sharpenings. Thanks for watching! -George

I think that you should use a strop on your razor. I had a barber for a while who used to strop his razor before each use. It doesn't take metal off but merely straitens a folded edge. I've seen them on Ebay and Amazon.

How bad are the chips? If they're fairly small, just sharpen normally. With time, they will sharpen out. If they're big chips, you can create a new edge. We made a short showing how to do this, I'll link it here. Great question! -George

You can call people nerds for comments you don't like, but you'll probably be missing a thumb in the not so distant future because of the way you sharpen. Knife jocks will never usually teach about safety. Ever work in an emergency room and witness tons of people come in all the time for accidents with knives because they were too sharp? Regular kitchen knives mostly. DON'T OVER-SHARPEN YOUR KITCHEN KNIVES. You DO NOT need slice through paper sharpness for food, or the metal shards that always come off ingested in your biological system.
