My assumption was that the E-wings we saw were prototypes and it hasn't been fully put into production. Lothal is known for its fighter production facilities, so it would make sense that they got the contract to begin making them. Naturally, the first couple units produced would be utilized by the Lothal defense forces. That would explain why we didn't see any outside Lothal, and would suggest they may become more ubiquitous in future stories

Given how Lothal played a big role in Rebels it would make sense to have Lothal be of strategic importance later down the line. It was likely worked into the season 1 budget so they have the model for later seasons or other projects. When doing a budget for a series, you tend to move money around to do stuff like that. They didn't need the E-Wing for this episode, but they had the budget in this episode to do it, so they now have the model and later can use it in as many future episodes as they like without the initial cost of having the model created from scratch.
They did this a lot in the Babylon-5 series too. You would get new ship models trickling into the series over a few seasons and then they had all the models for a massive battle late in season 3 that would have cost an arm, a leg and likely someone's head to try and pay for in one episode's budget, let alone get all the CAD work done for them in time.

Look at the F-15, the newest version looks similar to the original, but is light years ahead in only 50 years. The time span in Star Wars is less than 50 years, so the older fighters are easily in play, and the E-wing is the latest and greatest wonder fighter, like the F-35. Hope to see more of them.

The New Republic is no Empire and is not likely throwing its money at churning out a whole new navy in a couple of years. Newer generation x-wings matched or beat e-wings in performance and had more lasers. Outside of special cases, using multiple torpedoes to take out a mere starfighter was considered wasteful. Besides bringing a few extra torpedoes, the e-wing is outclassed by an updated x-wing. So it served as more of an updated hardware and software platform which would result in upgraded new gen x-wings eventually.

After they split off and go into hyperspace, a Star Destroyer pops in, destroying the remaining escorts, disabling the prisonship and tractors it in. What I think we could see would be the destruction of Lothal by Thrawn. I just feel like the general public, who is not too familiar with Thrawn, need something that conveys to them how much of a menace he is. I saw and heard a lot of people who weren't familiar with him say that he seemed like a punk in Ashoka. I feel, like you said, that they wouldn't create the models of the E-Wing and Lothal for just the little bit we got. It just seems like a good use of assets, a good holy shit moment, and also would tie maybe into Thrawn wanting to finish what he started with the Rebels finale. Plus still holding out on the Lego theory. We have gotten a few sets now with two opposing ships. Up until now they were ships that actually fought each other in whatever show the sets were from. They could have just made a set for the E-Wing like they did the pirate snub fighter, and then placed Shin Hati's ship with Ashoka's Jedi shuttle, but they put them together and I don't think that was nothing. I know Shin being on Peridia takes a big piss on the Lego side of my reasoning but I'm keeping hope that we may see this in the future.

They really did my boy dirty. I also dream of the E-Wing, it was a GREAT model, I'm super sad it didn't see more use. Hope it does see more action. The trouble is that the E-Wing isn't the NR's replacement for the T-65, that's the T-70 and 85, so I don't know why it was used, other than Lothal's infrastructure for fighter development for the Defender being turned around to make the E-Wing domestically.
I did appreciate the T-70's design, keeping it simple, but believably upgrading it's capabilities. The issue is that the E-Wing and T-70 compete for their role, and so don't really make much sense together.

My main issue with the E-wing and the 3rd gun on top was that it was dumb for them to mount the 3rd gun on top facing forward.
    There's no need for that.
They should've mounted it facing 180° backwards and give it a ball mount with a single blaster facing aft-wards.
Give it a nice wide 120° circular targeting arc for the Astro-Mech to target enemy bogies with who are on your tail.
Since DogFights are pretty common in the Star Wars universe, having a Astro-Mech protecting your flank would be a BIG DEAL.
Anybody chasing you would have a very bad day if they had to constantly dodge trying to shoot you while chasing your tail.

Supposedly, there are also deal going back decades that have profit sharing with other rights holders and designers. The reason that the new Star Wars stuff and even that StarTrek has a new timeline is precisely because this allows Disney to keep money. Nothing else.
