    Let me get this straight, They advertised a fridge to remind you of the ingredients you have because you know, opening it is difficult. But you have to plan ahead 7-10 days to make your Sriracha, and a year or so to plan on buying a personal home use meat grinder? Lets see Brad Leone make Tuna Tartare, it'll be more realistic.

    For people who don't own a meat grinder or smoke their oil and for that matter can afford a big hunk of fresh tuna, can I substitute canned tuna, bottled hot sauce and green onions?

      The tuna isn't in the freezer long enough to freeze. It just gets really cold which makes it behave much better when grinding or finely dicing. It's fine to do this to pretty much any meat you are about to grind.

      looks like a lot but it helps too cut through the avocado and tuna. without that raw bite from the chives, the flavors and textures of the dish would be too one sided and tiresome.

      RedroomStudios Most of the time, yes. But I’ve seen it chopped into very small pieces before and it definitely looks better. Also, it’s better for the texture of the meat. :)

    Okay. I read through the comments before the video even really started - like, after 20 seconds or so, when I got annoyed, because of that unnecessary fridge.
    And of course, there are all those comments about him cutting on a stone board instead of a wooden or plastic cutting board. I thought - because I hadn’t watched that far - that everyone was talking about those marble cutting boards that are really trendy right now, which are also terrible for knifes, but no one seems to care about that. And that bothered me. Then I moved on with watching the video and *he is seriously cutting on a full on stone board that’s uneven??* Is he serious?! I don’t know why that bothers me so much, but at least I’m not alone on this one.

    I really like this video. Not everybody is some simple home cook. Some people actually want to branch out and do things that are a bit more complicated or take time. A meat grinder is expensive, yes, but there are people out there who do a lot with them so the investment is worth it. Also there are people who like to make their own sauces. If you don't have time or don't want to wait then this recipe ain't for you. I want to try the homemade siracha sauce AND I just purchased a meat grinder. Had no idea tuna would work in one. I've got that, too. The B.A. format has definitely changed in three years, but there's nothing wrong here.

    I don't think in any case you should make tartare with a grinder, it will ruin the texture of the material. Dicing can keep the muscle fibres aligned while a grinder will squeeze them together.

    Not a personal attack, but...Fresno chilis are NOT red jalapenos. Fresno chilis are very similar to Anaheim and Hatch chilis. I believe the red (ripe) jalapenos are called Serranos.
    If I were there with you I would so smack your fingers, smashing into those whole avocados like that. People see that and think it's the right way to test for ripeness when it is as WRONG as it can be. When you do that to an avocado, and don't buy it, you're leaving a bruised avocado behind that will be disgusting and discolored when someone finally gets around to buying it. Probably why so many people hate avocados. Thanks, chef, for steering the world wrong in so many ways.
    How do you test an avocado for ripeness? Put it in the palm of your hand and gently bring the thumb side of your hand toward the pinkie side. If it's hard as a rock, it's not ready. If it's soft, it's spoiled. It should have just the tiniest bit of give. Whole palm, never finger tips. NEVER. I realize not everyone grew up in California and has been eating avocados their whole lives, but they can learn. And they might enjoy avocados more.
    Seriously, learn about your ingredients before you start trying to "teach."
