I think the logical fat guy gimmick these days is more the offensive lineman kind of size. So guys like Vader. They have a noticeable amount of flab on them but are also muscular and athletic and look like they could kick your ass. Or you can go sumo like Rikishi and Earthquake where they can still work a match but can incorporate a butt drop or splash into their offense and that's a protected finisher because of their size. The day of freak show wrestlers that make the odd appearance every few years makes no sense without the territory system. WWE isn't going to hire some fat guy to appear a few times and then disappear and bring him back a few years later.

Earthquake, Yoko and Rikishi are my favourite 'big guys' all who could work, and were over.
Earthquake is one of my all time favourites. Great wrestler and totally underestimated. Yoko is considered by those in the business as a great worker and he was over to me. Rikishi has gotten out of vogue but in his 2000's push he was great! He had one of my favourite Cage matches with Val Venis.
Perhaps the most legendary big guy was Vader but he doesn't fit the 'big guy' moniker like Yoko or Mabel.
I've also got a soft spot for Giant Haystacks and Viscera.

He had a successful run for a few years, and they brought in 2 more "Family" members named Uncle Elmer and Cousin Junior. Jim and Junior could move around alright for thier size, but Elmer just lumbered around in or out of the ring. All 3 seemed to have disappeared after Wrestlemania 3.

I think Jim's right in that people started seeing through it. The fitness craze of the 80s and 90s probably didn't really help things either. It became more about muscles than just size.
After that, big guys had to be able to move some. Granted, there were still plenty that weren't the marvels guys like Bam Bam, Vader, Blackwell, or Gang were, but they moved enough that they could believably beat people. Even Mabel, for all of his problems in the ring, could move around.
Then over time that obsession started seeing the "fat" guys getting more or less phased out all together. Every now and then someone would make it to WWE, but it's become rare. I'm not sure anyone on the roster is even approaching 400 lbs.
