This is my guess but Since all of the fungi lived inside of the dendro dragon apep, and the said dragon is one of the primordials who are the first inhabitants of Teyvat before the heavenly principles arrived to rule over the land they too are powerful at some extent that individuals who are part of the heavenly principles such as the archons and dendro archon who make world changing actions to irminsul or the world of teyvat they wouldn't be affected. Second guess is because since the said fungi didn't said the name rukhadevata then the said erasure done by the former dendro archon to the world made changes the only exemption is that the said fungi here recognizes the physical appearance of Rukhadevata not the whole identity itself. These are all guess upon watching the said archon quest of nahida.
That is actually a bit more complex than that. The world's memories of Rukkha's existence were altered not the actual history of the world. So events that happened in the past still happened, but the way they were recorded has changed. The deal Rukkha made with that fungi in the past was still made by Rukkha herself, except that the fungi's memory of that time was altered to having him think the deal was made with Nahida instead. That's just for clarification purposes, aside from that keep in mind that Nahida and Rukkha should look exactly the same, one is just smaller than the other.

In addion, don't you think it's weird that they just got into the underground chasm without even reporting to the Qixing in liyue first lol... If Apep continued to be corrupted she could put the entire world in a threat if she was to lose control so Ningguang would’ve given the green light immediately. In terms of her potential sacrifice it’s the only thing she knows how to do in a situation like this she loves her nation so much so if sacrificing her body and memories guaranteed their survival she’d do it in a heartbeat
all the other archons introduced weekly boss fights in their second story quest but venti got his boss fight in the archon quest so probably there's not much to cover in his character for now. Maybe in the future

Plants need sunlight to photosynthesize and produce oxygen, without sunlight plants will do “respiration” instead where they take oxygen and release carbon dioxide (which some plants already do at night due to the lack of sunlight). So she’s right that humans and plants would fight over O2, the oxygen supply would be more limited and CO2 would also increase from all the plants that can’t access any sunlight.
plants do respiration too when not exposed to the sun. If plant life overgrows, a lot of plants will not receive sunlight and will begin to compete for oxygen since they won't be able to photosynthesize
