Yam Cake 芋头糕 Homemade Soft Taro Cake

  • Yam Cake (non halal) - A timeless favorite regardless of age. During our childhood we had this kuih for breakfast or tea break. It's made from yam, rice flour, dried shrimps, dried mushrooms and Chinese sausages. My mom prefer this to be soft without chunks... so we coarsely mash the steamed yam and combine with the rice flour mixture. Serve this with chili sauce.
    Mmmmm...😋 reminds me of good old days!
    Recipe:
    *Ingredients 材料*
    Yam 芋头- 700g (after peel and cut, around 600g)
    Shallots 小红葱切片 - 150g
    Cooking oil 食油- 100ml
    Rice Flour 粘米粉- 200g
    Wheat starch 澄粉- 40g
    Water 水- 600ml
    *To Steam Yam Cake蒸芋头*
    Shallot oil 葱油 - 1 tbsp
    Cooking oil 食油 - 3 tbsp
    Dried mushrooms 干冬菇泡软切粒- soaked & dice 10g
    Dried shrimps 虾米泡软切碎- soaked & chop finely 30g
    Chinese sausages 腊肠切粒 - dice 2 pcs
    Seasoning - Sugar 糖- 1 tsp
    White pepper白胡椒粉 - ½ tsp
    Chicken stock powder 鸡精粉- 1 tsp
    Five spice powder五香粉 - ½ tsp
    Soy sauce酱油 - 1 tbsp
    Salt 盐 - ½ tsp
    Spring onion 青葱切粒- chop 2 stalks
    Red chilies 红辣椒切粒- chop 2 pcs
    1) Yam pet and cut, place in a bowl of water. 芋头去皮切丁,用水将芋头泡着
    2) After wash and drain, steam for 20 minutes until soft and fluffy 洗净沥干后,蒸20分钟至软绵
    3) Shallots slice thinly, fry shallots over medium low heat. Fry until golden brown, remove and drain. 小红葱切片, 中小火炸小红葱, 炸至金黄色沥油备用
    4) Steamed yam coarsely mash 蒸芋头捣成泥状
    5) Coat steam pan with shallot oil 蒸盘刷上葱油
    6) In a large bowl add in rice flour & wheat starch. Then gently pour in water. Mix well & set aside .大碗倒入粘米粉& 澄粉, 慢慢倒入水, 拌匀备用.
    7) In a wok, add shallot oil & cooking oil. Add in dried shrimp, saute until fragrant. 锅内加入葱油,食油。放入虾米炒香。
    8) Add in Chinese sausages, dried mushrooms stir fry for 3 minutes. 放入腊肠冬菇炒3分钟
    9) Season with sugar, white pepper, chicken stock powder, five spice powder & soy sauce. 糖,白胡椒粉,鸡精粉, 五香粉&酱油。
    10) Add in yam turn heat to medium low heat, season with salt. 放入芋头转中小火, 加入盐调味
    11) Pour in flour mixture 倒入粘米粉浆
    12) Stir well - cook until mixture thickens 搞勻煮至浓稠
    13) Transfer mixture into steam pan 将芋头浆倒入蒸盘中
    14) Smoothen with shallot oil, steam for 40 min. 放点葱油扫平表面, 蒸40分钟
    15) Once cooked, remove & let cool completely 蒸熟后,放涼
    16) Garnish with chilies, spring onion & fried shallots 撒上辣椒,葱花&炸葱

    Thank you for the recipe. I've been searching for this recipe quite a long time. My late mother used to make yam cake during my childhood time in the 70's and 80's... she learned to cook it from her Chinese friend who taught her the halal version by using fried minced beef ... I'm going to try this... thank you again

    Hmmmm my personal favourite. Btw wat is wheat starch? Where can I get it? Can I substitute it wif anything else if I cant find it?

      Wheat starch is commonly used in making noodles (i used this for Chee Cheong Fun) or kuih (Malay cakes)... You can substitute with corn starch. I also noticed some recipes only use rice flour.
      Our yam cake recipe is pass down by my mom from her old recipe book. Heheheh

      @@graciechai9487 hi I have checked few recipes many use wheat starch or tapioca flour.
      U can go for tapioca flour to replace corn flour.

    好喜歡妳的芋頭糕,很有彈性很軟。請問你用什麼牌子的粘米粉?
    泰國進口三象是純的。本地三象有加玉米粉,還有荷花牌,玫瑰牌等,個個不一樣牌子口感有差別。

      @@CityLifeMeal 謝謝妳的回覆。泰國進口的大多數都是北馬靠進泰邊界才有售賣,其它地方本地三象的比較多。
      我在猜想你的糕這樣有彈性可能是你把芋頭壓碎。無論如何,我會買本地三象去試你的方法。謝謝!!

    看来我是第一个做不成的😂请问做了太软是什么原因?水份太多?搅拌得不够浓稠?

      是的,在煮粘米粉浆时,要煮至浓稠。在蒸芋头糕时,可能水蒸汽滴入,可以用aluminium foil 盖着。

    What kind of food steamer are you using? I use a wok for steaming but the water dried up before the time is up so I have to refill my wok with hot water halfway.

      Hi we bought a 2 tier steamer. Yes the steaming process is long, either u need a bigger steamer or add hot water half way. 👍

      你好😊请问切不了一块块,是太绵? 以下几点要注意:芋头糕蒸后有完全待凉后切块? 在锅里煮芋头浆时,有煮到浓稠好像6:12 . 蒸时,蒸锅有滴很多水在芋头糕上? 如果很绵,补救方法你可以用烤炉慢慢把水分蒸发,把它烤干一点。可以用竹签插下看有没有沾上浆。
