    A THREE CENTURIES OLD DELICATESSEN THAT STARTED AT THE ROYAL FRENCH COURT OF KING LOUIS XIV. Step by step cooking.
    INGREDIENTS: about 18 big kroket’s
    8 pounds beef (lower plate, short rib or other cheap parts)
    3 celery stalks
    2 big carrots
    1 big onion
    1 garlic bulb
    1 leek
    1 fennel
    1 bunch of parsley
    5 bay leaves
    ½ tbsp cloves
    1 tbsp black peppercorns
    4 sprigs of thyme
    2 nutmegs
    3 sprigs of rosemary
    2 tbsp course sea salt
    2 cups of breadcrumbs (fine)
    2 cups of breadcrumbs (medium)
    9 ounces butter
    9 ounces wheat flour
    5 to 6 eggs
    Salt and pepper
    Vegetable oil for deep frying

    yeh, so here I am again 1 year later, I only make them every 6 mos...It's so hard to get the ragu taste right!!!! But I always refer back to your vid, the absolute best along with my mum's simple recipe...and the best part is the cold, dark beer!! and don't listen to dweebs, the music is perfect....actually, turn it up!!!     I have lived in Holland I have really missed these. Don't know why I thought they contained mashed potatoes. Going to make these soon. Thank you for the original recipe.

      The Dutch do make them out of potato which makes them very bland. Stick to making them with veal or beef, tastes way better even if it takes longer, They are worth your time.

      I been in Casablanca and I went to Harbor Restaurant, they served the fish croquette with amazing souse..I think it was a vinegar souse.

    Lekker Een, lm a Dutch born New Zealander, my parents both dutch used to make these and past on a slightly different recipe but I've tried your one and it just that bit better..hahaha. The history is really interesting I allways though it was a dutch thing, but it shows when you eat snails something's got to give...🤣

    Followed your recipe and also sprinkled a small amount of curry powder to the broth.

    Very nice! I have always used a very old recipe from my Oma in The Netherlands. The roux used milk. I will try the broth this year. Seems that it would be very tasty! Also I make them smaller. Happy New Year!

    Thank you very much for this recipe. I love the Krokets and especially Goulash Kroket. Unfortunately it's not available in the area for Germany I'm living. So I eat them always when I'm visiting the Netherlands and also bring some frozen ones with me.
    I'll try your recipe soon. Do you have any hints how do adopt your recipe to get some nice Goulash Krokets?
    I will also use your recipe as a basis for an experiment to create a low carb style Kroket.

      You can freeze the finished croquettes and then deep fry them for a few minutes when still frozen.

    mooi gedaan!! Net als die van moeder!!..except...heb ik altijd een probleem...soms is het ragu TE nat...dan als ik flour erbij doet , dan smaakt te foury, if you know what I mean...als, ik heb broth over, en als ik het alles wil gebruiken is het erg veel te nat? What should I do?

    laughing, you put so much meat in... my husband gave me crap cause it was way too much when i made them last time, i bought some from dutch store (canada) and there is meat in there if you look hard lol... so i paid $2/each at the store, i am making them now and try to put hardly any meat in so he'll like it 'like his mother made them'... ugh

    Sorry... Lots more work than needed for the broth... Too much meet and the serving is too large. I make them 50 to 75% that size which is manageable. Good instruction though!
