Campfire Bread in the Dutch Oven. Black Pudding. Plough Point Tarp Shelter.

- In this video, Maggie and I head out on a cold and windy day to do a spot of bushcraft baking on the camp fire. After setting up a plough point tarp shelter to keep the wind off and preparing firewood, I get the fire going ready to make dough and bake a loaf of bread in my Dutch Oven. I then use the lid of the Dutch Oven to fry some delicious MacLeod and MacLeod black pudding to go with it - absolutely lush!

Bread Recipe (I used 1/4 to make the loaf in the video)
Strong white bread flour - 1lb (450g)
Plain flour - 1lb (450g)
Dried yeast - 1oz (28g)
Sugar -1oz (28g)
Salt - 1 oz (I use less)
Tepid (warm) water - about 1 pt (570ml)
Place your Dutch oven near the fire to warm up.
Mix the yeast with the sugar and add to about 1/4 of the water, set aside.
Mix the salt with the flour and make a well in the middle.
Pour in the yeast mixture, a little at a time, drawing in the flour to mix, when the yeast mixture has all gone, continue with the remaining water until you have a stiff Dough that you can handle. (if it is too sticky, add more flour. If it is too dry, add more water.)
Knead to give the Dough stretch and structure, really give it a hard time for a few minutes.
Form the dough into a ball, score with a knife and place in the warm Dutch Oven to rise. It should
double in size, so keep an eye on it.
Once it has proven, knock the air back out of it, knead again and once again, form into a ball or loaf shape.
Place back in the warm Dutch Oven to prove for a second time.
Once it has doubled in size again, scrape some coals away from the fire and place the Dutch Oven on top of them. Pile more coals on the lid and leave to bake. Check after 10 minutes and then regularly to see how it is doing. Tap the base of the loaf, it will sound hollow when done.
Slice, smother in butter and devour!

Hey mister, when you cook something over the open fire if you make a little bit of mud and rub on the outside of your cooking pots once you wash them there will be no black residue on them. (Dont rub mud inside the cooking area.) The mud washes right off and your pots and pans will be perfectly clean. Hope this helps you. 😀 Hello from the Arizona desert.

I’m not sure if I love the fact that your films keep me company when I have insomnia, or the chance to rewatch your film is the reason for my insomnia. Either way it’s 3am and I want black pudding!
I just knead it in the bag for 10 minutes.
Also I use a round wire rack (amazon) covered with heavy foil that sits 1" off the bottom, it {Prevents Burning}.
4 Better Bread Add 1 Tbsp of water (under rack). The steam makes a higher rising loaf & nicer crust...

Any fellow willing to share his food freely with his dog, is a good fellow indeed.
when using the dutch oven over coals put the coals around the edge of the oven, never under it because it will burn. then place coals on top. half way thru your cooking time give the bottem a 1/2 turn clockwise and lid 1/4 counterclockwise. this prevents burning the bottom of your bread. but it still looks good. good eats.
I have a very small pan that fits in my Dutch oven. I place three nickels in triangle shape in the bottom of the oven and place the pan on top of the nickels. This air space prevents burning of bread even when placed directly on the coals.

That's why I have the type with legs. His is so small... nice for one. I would have put small stones under in a circle to hold it above the coals. I have 2 and have been using them for years. I make a nice coffee cake with pancake mix, cinnamon, apple sauce, raising... whatever I have. Pizza bread is a good one also. I put my graham crackers and chocolate in mine to warm while melting the marshmellows for smores.

Here is the trick with a Dutch oven. You can put almost all the coals you want on the top of it, but you have to be careful what you put on the bottom. I am a former Scout Master and we cooked extensively in the Dutch Oven. They are amazing pieces of gear.

Gringo or Simon, did you ever dig a hole, put the coals on the bottom, insert kettle, put coals on top then cover the whole thing with dirt? Something I've been meaning to try. Yes when I'm in the woods I cook it all on the campfire, evening for supper, middle of the night for a warm cuppa, early morning for breakfast (coffee). When people put old fridges on the curb, those metal racks inside are very handy for cooking over fire, as a grate.
@@campfireaddict6417 No but I have seen that done with old style bean pots. The clay crocks buried down for 6 or 8 hours and it slow cooks the baked beans......mmmm bacon.

That was a very respectable looking cob loaf! I was a craft baker for a long time and making bread six nights a week for two decades left me pretty jaded with it all. For the first time in the four years since leaving that industry I'm looking forward to baking a loaf again, this time bushcraft style! As an avid medieval reenactor, this video really struck home. We make our own flour and butter using medieval techniques. I have been making bread in a Dutch oven, using yogurt instead of water and have been very pleased with the outcome. However, after watching this, I will certainly give your method a try. When we do pizza in the Dutch oven we preheat the oven then add the crust and toppings and only cook with coals from the top. The heat from preheating is enough on the bottom.

Great job.Maybe fewer coals under. If you set the edges of the oven on 3 stones to keep the bottom just off the coals it does help. Our Neice and her Husband, are former Dutch Oven USA and World Champs. They use charcoal briquets and they have it down to a science. You would not believe what they can cook in a Dutch Oven. She judges national and international competitions now.

I saw your video. Thank you very much. A pointer in the future is to NOT place the douch oven on top of the coals but surround the oven with coals. This will prevent burning of your bread on the bottom. This was a brilliant video.
Thank you! Yes, heat at the bottom was definitely the issue- I’m going to make a trivet which should help and experiment with coal positioning - I’ll try it how you suggest. Thanks!
Another approach with bread is the 2/3 - 2/3 rule that I use. Put 2/3 of the heat on the top, and 2/3 of the way thru cooking, remove all heat from the bottom.
Or above the coals, hanging on a whatchamacallit....🥰😅. Great video.
