  • Two methods to make Ginger Scallion Sauce.
    An Asian favorite and classic condiment from Eastern Asia, particularly in Chinese and Taiwanese dishes.
    Ingredients:
    Method 1 (More Pungent)
    • 140 G - Green Onion (White Part)
    • 60 G - Ginger (Diced)
    • 1/2 Cup - Neutral Oil
    • 2 TBSP - Sesame Oil
    • 2 TBSP - White Sugar
    • 2 TBSP - MSG, Wok Toasted Salt, White Pepper Mix (Yum Yum)
    Method 2 (Less Pungent)
    • 140 G - Green Onion (Green Part)
    • 60 G - Ginger (Grated)
    • 1/2 Cup - Neutral Oil
    • 2 TBSP - Sesame Oil
    • 2 TBSP - White Sugar
    • 1 1/2-2 TBSP - Kosher Salt
    • 1 TBSP - MSG (Optional)
    Directions:
    Method 1
    1. Peel Ginger, julienne, and dice.
    2. Wash and score white part of Green Onion, and dice.
    3. In a small sauce pan, heat oil to just before smoking, and mildly caramelize diced ginger.
    4. Turn off heat, and add diced Green Onions, Sesame Oil, White Sugar, and Yum Yum.
    Method 2
    1. Peel and grate Ginger.
    2. Cut green part of Green Onion into 1/4-1/8".
    3. In a small mixing bowl, evenly spread grated Ginger.
    4. Pour hot Neutral Oil (not smoking) over grated Ginger, and let mildly caramelize.
    5. Add cut Green Onions, Sesame Oil, White Sugar, and Kosher Salt.
