  • Discussion about the designing and building of DEMACO extruders for pasta production with a focus on the model S-7501 Titan. This video covers the design philosophy and the technology used on DEMACO machines. The S-7501 is a flexible machine that can make a wide range of products. It also has a long service life even if used in the harshest manufacturing environments. It is fully automated and produces high quality, artisanal pasta.
    The S-7501 is a single screw extruder that produces approximately 1,675 kilograms (3,700 pounds) of fresh short cut pasta / hour or approximately 1,360 kilograms (3,000 pounds) / hour dry pasta.
    This video shows the Titan series, which are extruders specifically designed for use in washdown USDA food manufacturing facilities. The harsh sanitation routine in these plants require a rugged design that can withstand the daily washdowns required in a USDA foodplant. Titan extruders are constructed in stainless steel with ground and polished welds at the joints. This achieves a smooth finish to eliminate dirt traps and facilitate complete cleaning. DEMACO also offers a variety of options for the frame and platform depending on the application.
    Also shown is an all stainless-steel basin style mixer with twin paddle shafts for highly effective mix agitation / dough mixing. With respect to pasta production, superb performance in the mixer directly impacts the entire process.
    For mixer construction, the all stainless mixer gearbox is mounted slightly away from the mixer basin so grease and oil from the bearings and gearbox cannot enter the mixer and contaminate the mix. The mixer shell is thick and fully welded with no cracks or crevices for hygienic operation. The mixer paddles are fully fused onto the shaft with generous weld material and a smooth polish for a complete sanitary finish.
