    Persian Roast Chicken (Joojeh Kabab)
    Ingredients:
    1 whole chicken
    1/2 Persian pickled lime
    1 lemon
    1 tbsp paprika
    1 tsp saffron
    Salt to taste
    Instructions:
    Preheat oven to 400°F (200°C).
    Rinse and pat dry the chicken.
    Combine paprika, saffron, and salt. Rub mixture all over the chicken.
    Stuff the chicken with half a Persian lime and the juice of half a lemon. Place it in a roasting dish with half a cup of water.
    Roast for 1 hour until golden brown.
    Let it rest for 10 mins before carving.
    Rice with Barberry (Zereshk Polo)
    Ingredients:
    Basmati rice
    Dried barberries
    Butter or oil
    Saffron (optional)
    Instructions:
    Rinse 2 cups of basmati rice and soak in salted water for 30 mins.
    Partially cook the rice in salted water, then drain.
    Sauté the barberries in butter or oil until plump.
    Layer the rice and barberries in a pot, adding butter and saffron.
    Cover and cook over low heat for 30 mins until fluffy.
