- Uthukuli in Tamil Nadu is home to around a dozen dairy units that produce the famed Uthukuli butter.
Uthukuli butter has been in vogue since the 1950s. It is characterised by its slightly sour taste and lack of gloss, compared with the other commercially available butter. It will remain unspoiled for nearly a month if kept in room temperature without any contact with water.
The uniqueness of Uthukuli butter lies in the buffalo milk and its fodder. Uthukuli being an arid region, the buffaloes are mostly fed with drought-resistant grass and seeds. This makes its milk rich in fat content than the regular cow’s milk.
However, all is not well as the dairy units face an existential crisis. Around 20 years ago, there were over 30 units in the Uthukuli taluk. Now, there are only 12.

I have one suggestion for the channel that you should keep the background music lower as it is difficult to hear the main content in it . But the information is great . Thanks ☺️
True
No background music 🎶 good
There is really a need to improve this industry ,as needed in the future ❤️
Amul
Exactly
With no gloves. I say No Thanks how hard they have worked.
Hope GI tag is soon given for the product, it will definitely create a greater impact in the livelihood of the plp involved.
👌👌
they need to make it cleaner
Really selka brala ( drought Buffaloes) butter and milk tastes very thick and tasty, now presently in telangana our own native drought Buffalo breeds are now replaced with surthi , Murra , dulia breeds from North

I agree with this video, I would want to try this butter
GI tag will be hard to get due to the similarity from the French butter.
Sounds delicious when she say it.
Awesome
Can someone share Contact details of the person preparing butter
Listening about it for the first time. Every one knows only about amul butter.
I hope FSSAI looks into this as a regulator and an enabler. Schedule 4 FSMS is being followed or not. If it is falling under non-specified or proprietary food, shall be labelled as per standards. Traditional foods should also be regulated and promoted for better export and domestic distribution.
Should do something for these small nd best product industries
Nice
Most of the traditional industries died in india due to lack of innovation
You are true sir
Yeah .. this shop is owned by government (sarvodhaya) but there are many companies who are inducing some innovative ideas aswell .
Never heard of this butter before. Do they supply the white butter or do they pasteurize it and mix it with salt? Because the Amul butter isn't that delicious as homemade white butter.
Salt is not added and it tastes awesome... In Chennai it's fairly available.. Tastes much better than packaged butter...
@@ArchanaRajasekar ok
No mostly unsalted.. and you can get best butters as home made
Hope the State and Central governments step in to bolster the industry. In the meantime I hope the workers start using gloves.
@@kathir6881 The total lack of grammatical sense in your comment tells me that you need to come to Kerala and get educated. 😄
Correct. They have to use gloves may be his hands are clean already brother. U never know. In Italy while making mozzarella cheese I observed they too don’t use any gloves . May be it’s the temperature or whether bacteria don’t grow.
@@CochinKerala The education provided to us in Tamil Nadu is way better than most states.. Yes, Kerala has the highest literacy rate..but that doesn't mean other states don't provide quality education. We must compare quality of education provided in different schools, not different states.
BTW it's natural to get typos and grammatical errors while you are typing..its not necessary to criticize a person like that ,as nowadays people tend to not care about grammatical errors while texting online..
@@deepag6916 Why are you so triggered at a reply I gave to a troll who was mocking me? I trolled him back using his own words. What he said had nothing to do with my original comment and here you are here ranting about education and literacy. 🤦🏻♂️

Impressive content
Fantastic. Focus on hygiene yes a big must today 👍🏼
Good
Nicely presented video...good work ...someday we all taste uthukuli butter..😋
Yeah really enjoyer this video 💯
Hope u will
Isn't this how ALL butter is made everywhere?
Yummy 😋😋😋
Definitely GI tag should be provided by the Govt to Uthukuli butter...
I want some
Nice. Butter 1/2kg. Price please.
It would be better butter if they useed proper gloves for their hands.
Interesting butter, but I think they should improve the packaging and maybe sold internationally? They have long shelf life for transportation.
I’d buy it here in Canada
I can invest some money to develop if these people use gloves
It would be better if they didn't use their bare hands.
Lol why I haven't heard of it , may be because in my area butter with Himalayan cows which are fed in forests and made with traditional methods are more popular
U N H Y G I E N I C
Seeing this from uthukuli
They don’t call it uthukuli butter in north India just white butter it originates from here but mostly no one knows about it . Most traders might know this but not common people, you yourself might have bought this without knowing where it originated from.
This guy is using hands while packing butter
they should go to europe..to get more reach
The Hindu become the food blog
Music so loud
They r using pre used paint buckets to make butter not cool, should use steel utencils
Muaah
Why can't Indians just wear gloves? Even poor underdeveloped countries like African countries wear gloves
Uthkuli is district in tamilnadu.
Dairy unit
Yeah 🙌❤️
Can u give contact details of this original butter uthukuli
Support local produce
But who would like a sour butter
The music is too loud and I can't listen properly to what the lady is saying . Please correct the background music volume in your next videos
Then the problem is with your device, as the voice was very clear for rest of us.
Wearing of gloves should be encouraged
Exactly
Do house wives or our mothers or we ourselves use hand gloves at home? Why are we hypocrates
@@anandurs3467 that's because we know our mothers would keep themselves clean enough to do so. But theres no guarantee that other people making butter would follow same protocol. Believe me, there are many news articles where people used to think that the food is clean, but when there was a raid on the factory, all unhygienic practices were revealed.
For vit b12 and some useful gut bacteria, bare hands needed. Bare hands doesn't mean any bad thing.
Buffaloes and diary farming requires lot of farming . Not for draught probe areas.
Lots of love from Tamilnadu ♥️♥️
Eew! so unhygienic.
Reduce milk consumption to reduce milk industrialization
Our country has become largest beef exporting country
If they think they need the government to fund them, then it is already a lost cause. If there are enough interest and money to be made, I'm sure private parties will flood this place.
They should practice more hygiene while making this. All the process is made by a man using his bare hands
Exactly
Yeah 🙌
@@kathir6881 சண்ட வேண்டாம் பா விடுங்க..!
Hygiene is not always maintained by wearing gloves.
I understand the concern but nowadays hygiene is overrated.
It's traditional way of making butter.
And plz do google, use of bare hands (CLEAN HANDS) are needed for vit B12 and good gut bacteria generation.
And if hands are not clean while making butter it won't last for a month.
You must be knowing schools hv started projects like playing in mud, sitting down and eating with hands. The reason is same.
hope chhattisgarh will get limelight someday 🙂

Hygiene should be improved, no one wears golves!
Many in the comments are worried about Glooves: That industry survived for 60years in " hands " that to created a "brand value" . Many of us would have bought uthukuli butter and ghee is there a compromise any time in its quality / self life?
In our family we use this butter regularly for 30years, it's quality (colour, fragrance, flavour) and shelf life is always same.
In the era of sustainable development.let's TRUST OUR FELLOW HUMANS would also know the importance of cleanliness (cleaned hands). And let's reduce landfills created by polythene/rubber/Glooves/carrybag so on.
I APPRECIATE THE TEAM FOR USING BUTTER PAPER FOR PACKING .
Please do not say " from British era" as if our tradition was induced by Britishers. For heaven's sake. Go back as much as possible in time . The British picked up culture , curry, riches, science and knowledge even bathing from Bharat! . Why this British fetish. Otherwise the article is good.
Why in the name of God they use BARE HANDS for packing…..!!!!
Why can’t they use a plastic glove🙏
This happens only in India…💩😱
Plastic is totally germ free but hands are not.. yes right!
Handwashing is good enough right?
We eat using our hands. Nothing wrong.
Open hand packing in summer surely give unique taste to this butter 😂🤢 .

Most dirtiest and non hygienic butter making process on earth.
Absolutely NOTHING unique about this. This is EXACTLY how butter is made in literally every home in India since times immemorial. Even in our own home we make butter exactly this way.
The utensils are shaped a little differently that's all. 🙄🙄🙄😒
Of course this cooperative community effort is very nice to see. 👏🏽
Even though it’s exactly made the same way it taste better that’s the difference, it’s produced from the milk very unique to this region. Just as cheese is unique and tastier in certain regions due to climate and other natural factors ,this is special too.
Please use instruments and not hand.
Time has come now, for us to realise that Dairy is the most cruel industry and people are shifting to plant based products.
Pl stop promoting such items.
