How is the unique Uthukuli butter made? | The Hindu

  • Uthukuli in Tamil Nadu is home to around a dozen dairy units that produce the famed Uthukuli butter.
    Uthukuli butter has been in vogue since the 1950s. It is characterised by its slightly sour taste and lack of gloss, compared with the other commercially available butter. It will remain unspoiled for nearly a month if kept in room temperature without any contact with water.
    The uniqueness of Uthukuli butter lies in the buffalo milk and its fodder. Uthukuli being an arid region, the buffaloes are mostly fed with drought-resistant grass and seeds. This makes its milk rich in fat content than the regular cow’s milk.
    However, all is not well as the dairy units face an existential crisis. Around 20 years ago, there were over 30 units in the Uthukuli taluk. Now, there are only 12.

    I hope FSSAI looks into this as a regulator and an enabler. Schedule 4 FSMS is being followed or not. If it is falling under non-specified or proprietary food, shall be labelled as per standards. Traditional foods should also be regulated and promoted for better export and domestic distribution.

    Never heard of this butter before. Do they supply the white butter or do they pasteurize it and mix it with salt? Because the Amul butter isn't that delicious as homemade white butter.

      Salt is not added and it tastes awesome... In Chennai it's fairly available.. Tastes much better than packaged butter...

      Correct. They have to use gloves may be his hands are clean already brother. U never know. In Italy while making mozzarella cheese I observed they too don’t use any gloves . May be it’s the temperature or whether bacteria don’t grow.

      @@CochinKerala The education provided to us in Tamil Nadu is way better than most states.. Yes, Kerala has the highest literacy rate..but that doesn't mean other states don't provide quality education. We must compare quality of education provided in different schools, not different states.
      BTW it's natural to get typos and grammatical errors while you are typing..its not necessary to criticize a person like that ,as nowadays people tend to not care about grammatical errors while texting online..

Believe me, there are many news articles where people used to think that the food is clean, but when there was a raid on the factory, all unhygienic practices were revealed.

      Hygiene is not always maintained by wearing gloves.
      I understand the concern but nowadays hygiene is overrated.
      It's traditional way of making butter.
      And plz do google, use of bare hands (CLEAN HANDS) are needed for vit B12 and good gut bacteria generation.
      And if hands are not clean while making butter it won't last for a month.
      You must be knowing schools hv started projects like playing in mud, sitting down and eating with hands. The reason is same.

    Many in the comments are worried about Glooves: That industry survived for 60years in " hands " that to created a "brand value" . Many of us would have bought uthukuli butter and ghee is there a compromise any time in its quality / self life?
    In our family we use this butter regularly for 30years, it's quality (colour, fragrance, flavour) and shelf life is always same.
    In the era of sustainable development.let's TRUST OUR FELLOW HUMANS would also know the importance of cleanliness (cleaned hands). And let's reduce landfills created by polythene/rubber/Glooves/carrybag so on.

      Even though it’s exactly made the same way it taste better that’s the difference, it’s produced from the milk very unique to this region. Just as cheese is unique and tastier in certain regions due to climate and other natural factors ,this is special too.
