    Ingredients:
    Sponge
    1 cup all-purpose flour (125g)
    3 tsp instant yeast (10g)
    1/2 cup fresh milk (125g)
    Dough
    3 cups all-purpose flour (375g)
    1/2 cup sugar (95g)
    2 tsp salt (11g)
    5 pc large eggs
    1 cup unsalted butter (225g), softened
    Egg Wash
    1 pc egg
    2 tbsp water

    Was the Tanzhong method derived from the sponge method? It seems the same where in a flour mixture is created first but for the tanzhong, a cooked roux out of is added out of flour and milk (or liquid).

    If you're kneading by hand, how many minutes would you knead it for? I don't have a stand mixer so I would always knead my bread by hand and I really want tl make this po😊

      Yes! If you have a hard time with mixing, you can knead the dough for 3 minutes then rest covered for 10 minutes. Repeat until your dough passes the window pane test!

    tried this recipe.... kailangan ko ata bawasan yung eggs. sobrang sticky. Instead of 5 , gawin kong 4. Flat siya kahit umalsa na (super liquidy). Also.... medyo conflicted din ako sa yeast kase sabi 3 tsp /10g. So nag measure ako ng 2 tsp (naka digital) , equivalent nito is 10g. So kulang pa ako ng 5g since it calls for 3 tsp right (since 2tsp = 10g unless typo?)? If this is the case then dapat nakalagay 3tsp/15g instead of 3tsp/10g.
    Recipe is still good pero medyo di lang masyadong umalsa. prolly because the dough is too heavy sa liquid components or may problem sa yeast.

    Hi chef! I like brioche bread.. but I want in a diet way.. can we use a whole wheat flour instead of APF? makaka apekto ba ito sa process ng bread dahil sa low in gluten na makikita mo sa whole wheat flour..? Thanks!

      You may use whole wheat but the texture will definitely be different! Definitely chewier and less fluff. I suggest doing 80% apf 20% whole wheat. As Erwan says naman about food, it's all about moderation!

    This is SO weird I was craving brioche recently. I have 2 bakeries and 3 supermarkents in my neighbourhood and none of them sell brioche loaf. I will definitely try this out and film my results! :)
