Shanty, I want to thank you for doing these videos. These videos done in your kitchen reminds me of my Grandmother who came from India as an indentured labourer and settled in Mayo Village, Trinidad. I never met her. But visits to the family home bore a resemblance to your kitchen set up, except that hers was smaller and under a little shack house. All I have of her is a photograph taken the day she died. But I live in awe and admiration of her courage to provide for her family of ten children in a kitchen similar to yours. Of course no fridge, stove or electricity. I never tasted her cooking but every one of your videos make me think that her food may be as good as yours. I haven't tasted your cooking either but everything tells me that it is GREAT FOOD!

I thought I was cooking curry the right way before but after watching Shanty,,,,,Lord I have to give it to her, she is the Real Queen. I followed her lead on making some curry chicken and let me tell you everybody say it was the best curry they ever eat. Next time I go back home I definitely going to pay her a visit.

I grew up in Siparia..Siparia old road ...the food looks yummy .Going to try some when I come home .I have been in the US since I was 18 ,miss all the good home food,my mom and grandmother was a fantastic cook...

Shanty is a boss on the fireside good to see that it's still being use and I rather cooking on this than stove the good old days growing up in Grenada fireside food taste the best. My mom have stove but she only use it if it rains otherwise she cook on the fireside or coalpot.

Bandhania and tumeric root too! These ingredients are expensive in NY so when I see a "bargain" I snatch them up. There will be no spoilage going on in the fridge "crisper" again! BTW, peel and grate pumpkin (shredder side of box grater) portion out in zip-loc bags and store in freezer. Happy Cookin'!! 🤔

We have forgotten the firewood. This type of traditional cooking is important for a sustainable economy. We use locally available wood for fuel. In remote villages, in India , this method of cooking, using locally available dry vegetation for fuel, continues. We need not kill the trees for fuel, we can prune them and pruned twigs and stems are used as fuel. Nice video. Thanks for bringing out the cooking skills of Trinidad. You are correct our ancestors were brought from India in 1845 mostly from the states of Bihar and UP as indured labors by the British to work in sugar plantation after the end of slavery they were only payed 25 cents or less, we are their descents.
