How if there is no signal wire in esc
Because many hi tech esc doesn't have signal wire eg:- emax 1200d 40amp

Huge mistake.U should absolutely connect ground of esc and arduino together.However the 5V can be left if arduino is usb powered.
You're have a keen sight, this will be a mistake if we don't connect all the grounds properly when they're in a drone setup. However, when its standalone like shown in video. It should pose no issues.
The flight controller which is shown as the last, all the pins were properly wired.
