    FISH CURRY
    Preparation time 15 minutes
    Cooking time 20-25 minutes
    Serving 4
    Ingredients
    For Marinating Fish
    6-7 Fish, cut in darne , मछली
    Salt to taste , नमक स्वादअनुसार
    ½ tsp Turmeric powder , हल्दी पाउडर
    For Frying
    4 tbsp Mustard oil , सरसों का तेल
    Marinated Fish , मैरिनेटेड मछली
    1 medium Potato, peeled, cut in wedges , आलू
    For Fish Curry
    Remaining Mustard oil , बचा हुआ सरसों का तेल
    1 Bay leaf , तेजपत्ता
    ½ tsp Onion seeds , कलौंजी
    1 inch Ginger, julienned , अदरक
    2 fresh Green chillies, slit in half , हरी मिर्च
    ½ cup Onion paste , प्याज का पेस्ट
    Fried Potato , तला हुआ आलू
    ½ tsp Degi red chilli powder , देगी लाल मिर्च पाउडर
    Water , पानी
    Salt to taste, नमक स्वादअनुसार
    1 medium Tomato, cubed , टमाटर (optional)
    Fried Fish , तली हुई मछली
    Fresh Coriander leaves, roughly torn , धनिया पत्ता
    For Garnish
    Fresh Coriander leaves , धनिया पत्ता
    Process
    For Marinating Fish
    Apply turmeric powder, salt to both sides of the fish properly and keep aside for further use.
    For Frying
    In a pan heat mustard oil and fry the marinated fish on medium high heat from both sides until golden brown.
    Remove and keep aside.
    Then add the potato wedges and also fry them until golden brown in the same oil.
    Remove them and keep aside for further use.
    For Fish Curry
    In the same pan with the remaining oil add bay leaf, onion seeds, ginger julienne, green chillies and saute for a few seconds.
    Now add onion paste and continue cooking on medium heat until it turns light brown and oil starts separating.
    Then add fried potato, degi red chilli powder, water, salt and cook until the potatoes are completely cooked.
    Add cubed tomatoes, fried fish and stir it properly with light hands.
    After a minute switch off the flames and cover and let it sit for 5-6 minutes
    Remove the lid and add coriander leaves and serve hot with rice and garnish with coriander leaves.

    Tried the recipe and liked how light it felt on my stomach. This was my first time trying a non-coconut milk based fish curry (I'm Konkani). The potatoes turned into flavour bombs. More fish recipes? Yes please!!

    "Machh er jhol" is one of my all time favorite foods, and you have done it perfectly. Just would like to mention two things: i) we do add fresh coriander leaves in some machher jhol and ii) actually, coriander powder goes very well with fish.

      @@chandansingh-hv1eu That's actually a separate fish dish. This one is different. Adding mustard paste will take away its unique taste! I am from Odisha and am quite acquainted with Bengali and Odia style of cooking. So, felt like saying!

      @@ajitjha2744 As a Bengali married to a Bihari, I can attest that Biharis only have a couple of fish recipes, whereas Bengalis have a hundreds of different recipes and techniques to cook different types of fish. Comparing Bengali fish recipes to Bihari ones is a insult to the to the plethora of fish recipes in Bengali cuisine, starting from everyday machher jhol to delicacies like bhapa illish, bhetki paturi or chingri malai curry.
      They are not the same!

    Chef Brar - you grew up as a Punjabi in a Bengali "Tola" - I grew up as a Bengali in a Punjabi "Tola" :) - I passed on my love for Punjabi Dals to my children who love to eat it with homemade Makkhan. I just want to add that to thicken the gravy we don't add onions. but we take a couple of potato slices and mash them into the gravy. With summer coming find a recipe for "Aam Catla" - I prefer "Catla" fish because the pieces served come out larger. Summer afternoons after eating this preparation with raw mangoes and mustard seeds paste (on a Sil Batta) it was heaven to slink off to a cool part of the house and fall asleep. People use blenders now but growing up I remember the spices were always blended on Sil Battas. My mother would say that the blenders heat the Masalas and ruin the taste. I don't own a Sil Batta but I use an Electric Stone Grinder. It is the best "Jeere Bata" I can get in NY. I enjoy your stories. How I would love to sit with you and listen to your stories. Because what are we without our books, stories and cooking ?

      @@rohitnigam3355 no ..not as tempering in macher jhol...but use mustard paste as masala in some fish curry like hilsa ,,parse,, pabda( salty river water fish) etc...there are uncountable types of fish curry.....but most common tempering is with onion seeds ....and sometimes cumin seeds

    I leave alone in Russia and being a bengali i can never think without Macher Jhol. So i went to my local market and managed to get a carp.
    I am sharing my recipe which i got from my mother. Its simple easy and delicious.
    Marinade the fish with excess of turmeric and salt.
    Fry them in smoking hot oil.
    To the remaining oil add jeera and dry chilis. Add chopped onion, green chilis, saute for few seconds, add potatoes, salt and turmeric, sauté followed by tomatoes.
    To a bowl, add chili powder, Cumin powder and coriander powder. Add few teaspoons of water to make a paste.
    Add the paste to the pan, saute and add water.
    When the boil comes, add fish, let them boil for few minutes and adjust the salinity. Garnish with chopped coriander leaves.
    It will take 20 minutes and it tastes awesome.

    Being a Mumbaikar I have always relished the sea water fishes from pompfret to Bombay duck, but when I saw your video and decided to make a exact replica of the dish I just realised machar jhol now holds a separate place in my heart.     My mother used to make Rohu fish curry in our home in Lucknow. Fish seller used to come everyday on bicycle to sell fresh fish. We also had lot of Bengali families in New Hyderabad locality in Lucknow.

    A small tip to all guys incase of frying the fish just make the oil warm for 5mins set the flame high and after 5 mins place the fish one by one into the heated oil pan otherwise fresh water fishes as well as marine water fishes are very tender and they make break and come together and the structure of the fishes will be distorted

    I made this curry Machar zol today. Being Marathi, we eat nonveg with flavors on steroids. I can eat this once and while, simple test of fish. No overpowering Flavors of spices.

    How strangely pleasant, I was born in a Sikh family, in Bengal, a town called Asansol. Surrounded by Bengalis on all sides, my para is called Chakraborty para, my neighbours are Sarkars, Chakrabortys, and I feel you when you say you were raised with the subtle nuances of Bengali cuisine!     i also spent my childhood with haldar aunty she is bengali we use to call her bengali autny er fish curry no words to express sweet se made i coconut milk has idli kind of balls awesome unfortunately she went far away from us because of diabetes i n my little princess miss her n her hand made food.good bless her n her husband . apney unki aj yaad diladi😞😞😞😞. n mahindar singh aunty ki bhi se is from bihar she made awesome jackfruit curry she passed away recently by heart attack 😞😞😞😞

    There are as many variations of the macher jhol recipe as there are Bengali families. They key, as chef said, is simplicity. My mom was exactly how Chef described the Bengali aunties. Very quick and efficient, a fish curry would hardly take 30-40 mins to cook. And bare minimal ingredients.

    "Maasor jul" or "maasor anja" is one of the most ancient and simplest form of curry that we Assamese people take pride into. Surely not aware of its influence but our type of "Maasor jul" made by our grandmothers were one of a kind delicacies for every Assamese household. Xoru maasor( small fish) jul has always been a kind of " aji beleg eku bonua nai...okole xoru maasor jul aru bhat" ( haven't cooked anything specific its just small fish curry and rice)😇😇😇

    Hi Ranveer, am a Bengali and really enjoyed how you used all the bengali terms in this video. I am these days in love with one fish recipe. Its with Pabda maach. I blend some ginger, green chili, coriander leaves and kalo jire in a mixer and make a paste. Marinate the fish with salt and turmeric as usual and fry them in oil. Keeping them aside in the same oil the add a little bit of kalo jira as foron then put the paste in and fry that for few min. Then add little water, not too much, for the gravy, add salt to taste and a pinch of haldi powder. lastly add back the already fried fish. let it cook for few min and you are done. Garnish with some more coriander leaves and green chili. I also like to squeeze a dash of lemon on my fish just to cut the fishy smell and enjoy with gorom bhaat.....too good!!

    "Tastiest food is simplest to make yet most difficult to make".... So true..
    Adding exotic things will anyways make the food taste good, but the real test of taste is when the food is cooked with less ingredients..
    And when we talk about Bengali cuisine... Machher Jhaal (onion seeds, turmeric powder, red chilli powder, and green chillies) is one of the best example :😀😀

    Chef, hats off to you for capturing the soul of bangalir macher jhol. whenever any non bengali asks me about this, I discourage them because I feel it is a very acquired taste that not everyone can appreciate it.       Tez patta and Onion are generally used in East Bengal. We as Shyleti do use both of them.
      If it wasn't a tomato based one, we would have also used Jeera powder and a bit of garam masala on just aaloo torkari.

    It is staple dish of every Bengali family. Everyday, Mom, aunty, mashi, pisi and thakuma sobai ei recipe toiri kore - I mean we prepare it. Though, I prefer Katla or Sol Fish instead of Ruhi.

    As a Bengali I appreciate your style but to mention one thing we too use lot of coriander leaves in our "maach" preparation and in your cuisine if you use some cumin powder it would enhance the taste of the dish .Please consider the suggestion.     Dear ranveer... We Bengalis don't use tomato in authentic macher jhol. Next time try this recipe without tomato and ginger. It will be awesome.❤❤❤❤❤❤❤❤
