- Recipe for beef stock from beef ribs
Ingredients for 2 servings
• 500 g of beef ribs
• 2 large onions
• 3 cloves of garlic
• 2 large carrots
• 1 parsley
• 100 g of celery root or 1 leaf of celeriac
• 4 balls of New Spice
• 2 bay leaves
• 10 pepper balls
• a teaspoon of cumin
• a teaspoon of salt
Method
1. Pour 2 liters of cold water into a large pot, add salt, beef ribs, onion, garlic, carrots, parsley and celery. Bring to a gentle boil.
2. Add bay leaf, allspice and pepper to the broth. Cook on low heat for about 3 hours.
3. During cooking, we gradually remove the precipitated protein that floats on the surface. If we didn't collect the protein, our broth would become cloudy.
4. After three hours we are almost done. Take out the meat and strain the broth.
5. If you want, you can add cooked noodles, carrots from the broth and chopped meat from the beef ribs to the broth. You can serve a strong beef soup or use the broth to cook other recipes.
