      so true !!! Brisket and Pork with Puglia wine etc . 4 hours slow cook until the brisket chunks fell to tiny bits .Made the day before .The smell is unreal . Also is amazing on a pizza base

    For my fellow American viewers, I weighed out the items to convert from metric weight to cups. It's not exact, but I was within a few grams on each measurement. It was close enough to taste as good as Gennaro is claiming:
    1/2 Cup of Butter
    1 Cup of Flour
    4 Cups of Milk
    1 Cup of Parmesan Cheese
    Also, I made a 1/4 recipe and I had enough to make a whole lasagna with none leftover.

    Thank You Gennaro for teaching us your classic family recipes! Reminds me of my late grandfather's cooking. Tons of butter for everything. So impressive that you don't have big gut eating the way you do! My grandfather passed away from high blood pressure and cholesterol problems. Never stopped him from eating and cooking his delicious meals for the family. Stay healthy Gennaro! Looks like your family will enjoy your cooking for many many years to come!

    I can never understand how store bought lasagne layers perfectly, and seems to be choreographed in its preparation. Some of the best lasagnes ive made came from the oven bubbling and bending into all kinds of shapes, not looking like layers of stainless steel separated by meat and cheese. To see Gennaros do this, makes me proud ;)

    White sauce(Béchamel) first:
    100g unsalted butter, melt in a pot
    add 80g of flower, mix
    Add 1L of milk, mix well, stir long
    Add 100g of parmesan cheese(stirred), mix
    Add 2 pinches of salt
    Add pepper
    Grate quarter of a nutmeg
    Cook until its getting thick.
    For lasagne you need:
    -500g of lasagne sheets
    Need about 1 deep bowl of Ragu
    2 large soft balls of Mozzarella cheese
    Grated parmesan
    For lasagne layers:
    Put Ragu on the bottom of lasagne cooking pan
    Cover with lasagne sheet, put Ragu on the sheet, put white sauce, put pieces of Mozzarella and grate Parmesan cheese, cover with lasagne sheet; repeat until go up to the end of lasagne pan.
    Put in the oven 180C for 35-45 minutes

      I always add some Colman's English mustard to a cheese sauce - obviously it's not authentic Italian that way, but it really adds to the cheese flavour... I would add nutmeg to a bechamel (white sauce) but not to a cheese sauce, personally.

    This is the best lasagne recipe I've ever tried, it freezes extremely well and tastes even better when reheated after defrosting. The tip with the aluminium foil makes such a difference in cooking the pasta evenly. Thank you so much Gennaro and Jamie!

    I Love Italian cuisine. All heck I might as well admit it that since I am born and raised dye in the wool south eastern USA we folk eat anything that tastes good and properly seasoned and cooked well. Not matter what culture the cuisine came from. Being that USA Southern cuisine is a mix of several cultural foods and ingredients that says a lot about what we will eat if it tastes good.
    One last thing as a personal note to Jamie Oliver. I have great respect for people who honor their elders and mentors and it is very honorable that you pushed your mentor Gennaro Contaldo to the forefront like you have. It's a show of respect to who instilled a passion in you for Italian cooking.

    I've made this dish TWICE now and each time it was a HIT at my dinner table. I've made a beschamel before for a French fish dish, but never before in a Lasagne, it was so flavorful, and his technique was so easy to follow. Also added small slices from a Grana Padano rind to the beschamel, and in the Ragu and later infused it in the dish as it baked.

    Finally someone who makes their lasagna the way my Mom did, she found this recipe in a magazine she told me and she made it and it's a big part of our family history. Once you have it this way, you would never go back to ricotta or cottage cheese. This is the best! I just made some the other day. Loved your video!

      maybe you can help me since I didn't understand something: His family ragu is made with big chunks of meat. So i couldn't understand if he simply used only the tomato sauce or he grind the meat and also put it in the lasagne.

    Bravo Gerrano Bravo!!! I love your recipes and the way you teach them are so magicaly simple and are the best! I am Greek, i love Italy and Italian food and i follow your recipes, like the krispy chicken and i loved it. Only you can explain how to cook a complex food like lazagne and ragu and still with your magical simplicity make it look so easy and fun.

    Followed his ragout recipe to the T, made my own fresh pasta into lasagne sheets and followed this recipe to the T. Currently in the oven, I hope it’s as good as it looks!

    His English has markedly improved in the past year, he speaks slower, clearer, uses more descriptive words and also uses less word short cuts (eg pronouncing D instead of TH in this, that, then)

      I don't think so. He is slowly adapting, he has been in England 15 years, so he should just about be picking up more of the language.

      The Aura Tree I'm not sure but I think I heard he's been in England about 30 years. You can check on 'Two greedy Italians'. It's one of my favourite shows!

    Благодаря вам мне стало ещё проще готовить! Та же пицца. Раньше это была сухая лепёшка с пяти сантиметровой начинкой, а теперь это мягкая тонкая лепёшка с пышными бортами с кучей сыра и самым мясным сервелатом! Ещё маслины добавляю, обожаю их. С вином вообще кайф.

      He's Italian and lives in England he probably switches between accents without even noticing it. It happens to me also depending on who I'm around. It's a subconscious thing I think.
