How to Make Croissants at Home

  • Making croissants at home can take a while, but it is definitely worth the effort. I wouldn't necessarily say they're hard to make. They just ask more of you, but that's because they give more too.
    This is a small recipe! It makes about five. I normally see larger recipes that make eight to twelve croissants, but if you're living by yourself or just with one person that can be a lot. Also if it's your first try and you mess up, you end up using a lot of butter too.
    INGREDIENTS
    For dough (you'll need a kitchen scale)
    202g bread flour (important to use bread flour!)
    55g milk
    55g warm water (preferably at 100 °F or 38 °C, you can also touch the water with the back of your index finger, it should be lightly warmer than your body temperature)
    4g kosher salt (or 1 tsp)
    25g sugar
    5g active dry yeast*
    10g unsalted butter
    *Mix the yeast with the warm water and leave it for 5-10 minutes before incorporating it into the dough. Also, make sure it's active dry, not instant yeast.
    For butter block
    125g unsalted butter (Or 1 stick of butter plus 1½ tbsp)
    Notes:
    - On the first day, make the dough at night! It only needs 8 to 12 hours in the fridge overnight. Start laminating the dough on the morning of the second day. This is because if you leave the dough in the fridge for more than 8-12 hours after first making the dough, the yeast will start to die. On the third day take it out early morning from the freezer and let it defrost in the fridge until it is malleable again. Then go ahead and roll out one final time and shape!
    - Try to use good quality butter. Regular butter at the grocery store has 80% butterfat. The higher the butterfat content, the better the lamination. Use butter that has around 82% to 84% butterfat. I use Kerrygold and Vermont creamery.

    I used this as my 3rd try for making croissants after finding mostly recipes that made far more than I needed (and flopped). This has been my most successful attempt yet! Any error was on my end since I need more practice at keeping the dough the same thickness throughout the rolling process and making sure the butter doesn't come through either. Even with the listed issues I still made some fabulous tasting croissants. They're not the most most evenly shaped in the world but I did achieve layers in dough so Ill just practice some more. I'm making this my go to practice recipe since they make a small batch which is just enough for me and my small household. Thanks again for sharing with us!

      I'm really glad you tried them!! Yeah I realised so many recipes were for larger batches and I've wasted a lot of butter practicing myself.
      I think getting the lamination on point just takes some time honestly, once you get it though there's so much you can so with laminated dough! Let me know if you need any help, thanks so much for your feedback

    i always love your videos, they're so calming and i really hope more people notice your channel bc of all the hard work you put into making them so cohesive! idk if you will see this, but may i ask if it's possible to use instant yeast instead? i understand that means i don't have to proof it in warm water beforehand, but i'm afraid that if i omit the water altogether and just add the instant yeast to the dough mix it wouldn't have the same consistency as there's less liquid in it altogether :') thank you!

    I found this recipe through TikTok a while back and I have been trying to find a good time to make it since it took three days. I am going to say, this bread is amazing. They are so delicious and are definitely worth the work. I did make some mistakes since it was the first time I baked any type of read but the recipe is super easy to follow and they come out amazingly good. I will totally try to be really good at making these from now on.

    Hello :) I want to thank you for your video! I always think that process of making croissants is very difficult and layers are not possible to be reached ahah) But I was wrong! Your recipe is the best! The dough is so soft and easy to work! The result is overwhelming definitely! I had some problems with forming and baking but they weren’t very serious. I will try to do my best in the future)

    I seen ur double chocolate croissant video on tiktok and was wondering if you could either make a vid on those specifically or just let me know the changes to make to this recipe along with how to make the filling!! I have a fatal tree-nut allergy and chocolate croissants are MY FAVORITE but I can rarely ever have them from a a bakery bc there’s always cross contamination! I’d love to know how to make them, they looked so delicious 🥺!!

    Hello, I was quite reluctant to do this today. You see, Ive made too much croissants from recipes Ive seen youtube which resulted to too many yields. Cant stress enough how many butter Ive wasted before. When I saw how little flour your recipe required, I said why not. It was my first time getting beautiful air pockets.     Tried this recipe with instant yeast and maida (which I think is stronger than ap flour), changed the time frame so that it took about 4-5 hours with the resting. I didnt achieve the honeycomb but it was very light and delicious. Would definitely make again. Thank you for the recipe.
