This is another cracker of a dish!!!
So easy you can make this at home you don't even need a wok, you can use a frying pan for the sauce and a sauce pan to deep fry the fish.
Simple, fresh, healthy and packed full of flavour.
Simple tutorial with Chef Pi Tou showing us how to cook and prepare the various ingredients for Pla Lard Prig from start to finish.
ปลาราดพริก Pla Lard Prig in Thai
Here's the recipe:
Coley chunk 300g
100g Cloves of garlic
100g Large sweet chilli
4/5 Tbsp fish sauce
4/5 Tbsp White vinegar
200g coconut sugar or palm sugar
50g Fresh coriander
breadcrumbs
Self raising flour
Some sweet basil and sweet chilli to decorate

As with all Asian cooking this is a rough guide with regards to amounts, adjust for your own taste and spice tolerance.
If you want to make it spicier then toast birds eye chillies instead of large sweet chilli.
