the billy t is going to be a reference to billy t james well known NZ comedian but I'm not entirely sure about how the link works

because of the cafe is called "Jesters" and a jester makes people laugh, so they are trying to be funny with some of their food names like his "Dr. pepper pie" of course really meaning the pepper spices, not the original drink. they have a bunch of other funny names for their food and "Billy T" was a comedian so it fits, may he R.I.P
