I drove 12 hours today, so I didn't eat much. I had about 2 oz of Swiss cheese and some pork rinds after getting back.

lose the cheese ;) you dont need Dairy - also the pork rinds may be fried in seed oil .. so if you can get off the snak mindset - that helped me a lot. Cheers to you from Australia!

I thought carnivore diet only consists of beef?
There's different approaches to it and they all have different names. I think an all red meat, water, and salt approach is called a Lion Diet. Carnivore could be as restrictive as that or as flexible as "any animal product" which could include dairy.
Carnivore is only animal products, so any meat including fish and fowl, eggs and butter. Hard non-processed cheeses are carnivore, and don't _usually_ contain lactose. Raw milk is considered carnivore, but we don't have that around here, so if I do any milk I get Fairlife milk, as its ultra filtered, and has about half the carbs as the pasteurized milks.

Animal products. Dairy, seafood, bacon, etc...then there's the stricter form. Lion diet....beef, lamb, ruminate animals only.
throw away the cheese and go nuts with the beef.
I plan on cutting dairy here soon, aside from butter, I'll keep that in the lineup. Thanks for the comment!
