  • Αγριόχορτο, wild greens salad recipe, The magical Dandelion plant, prepared in a super healthy way, as a salad, lightly withered with hot water to retain all its nutritional values, fused with caramelized onions, garlic, spices and fresh pomegranate, then topped with a refreshing salad dressing.
    The Ingredients for our recipe are:
    /For the salsa dressing:
    2 - 3 lemon juice
    150 gr of Greek yogurt
    50 ml of olive oil
    50 ml of pomegranate syrup
    10 garlic cloves, crushed
    Into a bowl, mix all the ingredients, put in the fridge and allow to fuse and set.
    /For the salad:
    1 Kg of cleaned Dandelion Leafy greens
    1/2 kg of red onions, sliced in thin half rings slices
    2 - 3 pomegranates in seeds
    1 small spoon of: salt, black pepper, coriander seeds, garlic powder, ginger, sweet paprika
    Into a pot with hot water, we dip the dandelion for 30 seconds, then remove and strain dry. In the meantime, into a large pot, on medium high we heat the oil then add the chopped onions, and sauté for 5 minutes, then we add the crushed the garlic, and all the spices, then leafy green and sauté for 2-3 minutes, remove from the heat, serve onto a platter and sprinkle with our salsa dressing, and the fresh pomegranate seeds and enjoy as an appetizer with Arabic pita, roasted bread, or with chicken, meat or vegetables.
