最近の”泥系”のお店でも煮干しはよく使われますが、このお店は泥ではありません。それでいてしっかりした煮干しの味を出し、醤油やその他の味ととてもマッチしていました。一度みなさんにも試して欲しいですね。

I was rewatching this video and this time, for some reason, while paying attention to the food, I was also hearing classic J-Rock songs in the background lol. I don't know whether i just kinda zoned out or never really bothered about this detail before, but this time I found myself listening to the songs in the video as well! Ohhh I can't wait! I've eaten at many ramen shops here in Cali where the chefs come from Japan and start their ramen shops and they're unreal. I can only imagine eating it in Tokyo!
Sinichi and Satoshi, Japan must lead the world in vending machines! I've never seen anything like it except from you guys. I trust that the ramen dishes were not actually dispensed from them, but the automation in ordering and paying for food is nevertheless impressive! The ramen of Nakano is magnificent! Great episode my friends!
+Juanelo1946 you know, probably most ramen restaurants here in japan are paid via vending machines. I actually don't remember one without one. hmmm.....Really hope you and Lulu could come here one day.

+Sakura Spring yes the broth really is the most important part. Next the noodles. Just like you said. Japanese char siu really has nothing to do with the Chinese one except for the name. It's never colored red and as long as it's melt-in-your-mouth tender, it's considered a good char siu. Has to be really tender so it's usually a very fatty part of the pork.

at first when i read "Japanese Ramen in a sardine and soy sauce based broth" i was like yay finally ramen that doesn't uses pork bone broth. but then the minute i saw a slab of chasu on top of the ramen i went " ok still pork forget about it"

June O ahhh I see. Don't worry though. Lots of ramen places that don't use pork. Shoyu ramen is usually beef or bonito flakes. We have seafood based ones too!

Shinichi's bowl of sauce was really really attractive: I can't doubt that its taste was amazing!
I'm not sure I like those vending machines at the entrance of a lot of ramen shops you visited. Doesn't it make the visit to the restaurant a bit... impersonal? Or is it something japanese people prefer? I would like to hear your opinion!
+Isos actually most Ramen places in Japan use vending machines for ordering. A lot of other types like curry shops use vending machines to order as well. One reason is that it makes things to faster. They also don't have to hire staff to take orders. Finally they don't have to handle money as it's considered very dirty especially for those cooking or serving.
We are going to visit Tokyo in a week time will definitely check this Ramen shop out. Any chances you can include the dishes you had in this video in Japanese? I cant read Japanese but will try to ask for help/match the characters lol. Thanks!!!!!
+Tram Anh Vu How exciting! Ok, first I got the Charsiu Kara Tsukemen (チャーシュー辛つけめん） which is spicy dipping ramen with roast pork. Satoshi got the Niboshi Soba (煮干しそば）which is their basic fish-based ramen. Both are fantastic and if you go with someone, I recommend getting these and sharing them so you can try both types. Hope this helps. Let us know how you guys like it. And if you guys need any help let us know too!. We're really close by!
