Following the Crusaders' capture of Acre, Saladin moved to intercept Richard's advancing army just outside of the city of Arsuf as it moved along the coast from Acre towards Jaffa. In an attempt to disrupt the cohesion of the Crusader army as they mobilized, the Ayyubid force launched a series of harassing attacks that were ultimately unsuccessful at breaking their formation. As the Crusaders crossed the plain to the north of Arsuf, Saladin committed the whole of his army to a pitched battle.

Saladin didn't retreated with such disorder neither did suffered such loses, perhaps around 3k to 4k, in comparison to Richard's less than 1K, but Richard wasn't able to deliver a decisive defeat to Saladin that could have turned the table once for all, and also Saladin wasn't willing to go hard like King Gye did in hatten with Hasty decisions perhaps that was supposed to be main reason behind the treaty of Jeffa,
From my point of view, Richard was trying to figure out the victory from a already lost war, (because of the fairly long and destructive Acre's Siege and Lose of Fredrick's Army). That war (3rd Crusade) was already ended from it's very start.
Crusadees couldn't stay away from the coast because their supply line was threatend as far as they move from the coast
Salahdin prepared to defend Jerusalem Richard couldn't have enough force to mount an offensive and he was afraid that his army may be destroyed due lack of supplies, the required constant attacks on the wall or any force that would atrack his army while he is besieging the city
