Cornbread with collard greens is a must. You haven't truly experienced southern food until you try greens and cornbread.

You absolutely have to try sweet potato pie. Preferably in Georgia. My wife was from Georgia and fixed the best sweet potato pie I've ever eaten.
It's similar to pumpkin pie but so much better. I have had really good sweet potato pie in Florida but, I've never tried it in a restaurant.
Southern or soul food style oxtails are really good. My wife used to fix pigtails and rice that were excellent. I doubt you'd find that in a restaurant though. But you can get oxtails in restaurants. They've recently become a gourmet item so, they've gotten very expensive. They used to be fairly inexpensive. Even Gordon Ramsay has cooked them.

@phobiaone - What people that like to lay claim to New Orleans food will stop doing is giving credit to Cajun/ Creole people, when saying Creole food is another way of crediting French/ Cajuns with food that is not theirs and the continuing erasing of the enslaved Africans. New Orleans food is the food of the African enslaved people or considered Soul Food today but, you will not find any of these dishes being served in the Native American or french cultures. As for as Caribbean cultures, central and South American and even in South Carolina where the Gullah Ghee people live, they serve the same foods by similar names that is the culture of the enslaved people including BBQ. The only reason why people can lay claims to African Americans food is because, we never had or was given any money to make money off of our intellectual property or culture and our culture becomes American culture and currency for anyone that wants to claim it. We are America’s ORIGINAL TOP CHEF’s!

Since you like the sweet cornbread, get a box of Jiffy Cornbread.Get a box of the Zatarins Gumbo or beans and rice. Follow the directions on the boxes! While the cornbread bakes, cook the main dish. Split the cornbread in half and spread plenty of butter. Done with the main dish? Here goes...crumble some cornbread in a soup bowl and cover with the main dish. Wrap leftover cornbread in foil after it cools and do the same with a different toping like chili, onions and ANY beans. Way to fill up quick after a busy day! ❤❤❤❤ you both.

I'm from Mississippi about 3 hours north of New Orleans. I'm 60 now, but when I was young, my Mom would cook ham, black-eyed peas, butter beans and cornbread for supper. Sometimes we would have turnip greens and home made pepper sauce too for supper with the rest of it. We lived in Jackson, MS but half of our yard was a Garden that we worked in all the time. Then in the morning, Mom would warm up the left over cornbread in the oven, she would split it open and smother it in butter. Then we would pour some strong backstrap molasses over it for Breakfast with milk to wash it down. It was the BEST. I still love that sometimes for desert instead of breakfast. Another way to enjoy cornbread is to make it a little sweet like my Mom's, butter it, then pour black-eyed peas and juice over it.

May not love New Orleans so much in the summer time as it gets really hot and humid. Red Beans and Rice plus Gumbo are considered to be Creole/Soul food. Usually considered to be a mix of French, African, Caribbean and Native American cultures. Next stop Austin Texas and Terry Blacks for BBQ. Oh, Cornbread really good but kind of on the dry side so dipping it in the Red Beans and Rice sauce was a good idea. More commonly you put butter and honey on it.

@golfr-kg9ss New Orleans food is the food of the African enslaved people or considered Soul Food today but, you will not find any of these dishes being served in the Native American or french cultures.

I grew up around New Orleans! It's fascinating to see people experiencing the food I grew up with for the first time! One thing to note : next time I recommend dipping the cornbread in the red beans and rice, or even crumbling it up and mixing it together (like one would crumble crackers into soup). It makes them less soupy, and the cornbread absorbs the juices without getting too soggy, adding a nice thick texture to the dish. As for where we get all those flavors for the gumbo, New Orleans is one of the oldest "melting pots" in the U.S. It's a mix of many cultures, especially when it comes to the food and spices. Great video! I'm hungry now.

My family is from south Louisiana and I have lived overseas plus I have a sister in law from Malaysia I have had two occasions to cook gumbo for friends from Europe and from Malaysia loved their reactions because we do what I call float our potato salad in the gumbo also I don’t cook it spicy (peppery) but spicy flavor multiple seasonings

One of my favorite memories from childhood is having leftover cornbread with milk in a tall drinking glass and using a spoon to scoop up the chunks of cornbread. It was such a good snack before bedtime 50+ years ago. 😁

Crystal hot sauce has been my favorite hot sauce since I was a little boy, and red beans and rice has always been my favorite meal. Obviously, I'm from New Orleans so every Monday the house special in most restaurants in NOLA is red beans and rice. It's been that way for a hundred years I'd bet. My wife doesn't put her red beans on rice she puts it on top of a corn bread muffin in a bowl, try that out too you won't be disappointed. Also, next time you folks are in NOLA eating out try to add a little bit of Crystal hot sauce to your red beans and rice, it's very tasty. Cheers!

Making Gumbo is an art form. It's the epitome of the "family recipe" genre of cooking, even more so than fried chicken or apple pie. It's not only the special mix of spices someone chooses, but the cooking time, how they stir it, how much heat they use, etc. Unfortunately, I've never learned to cook it myself, it wasn't part of my family's tradition. So I have to rely on the experience of others. Nicola, I had to laugh at you a little because when you first tried the gumbo, I was saying "Nooooo! Blow longerrrr!!!" because I knew you were going to burn your mouth. Gumbo generates its own heat, if you ask me. By the way, you guys are an adorable couple.

Thank you so much for your kind words.. it was delicious at Lil Dizzy's restaurant. Cooking gumbo does seem like it is a art form! It's amazing how each family has their own special touch when it comes to recipes.

Welcome to 'Merica, mates! This is what we call Cajun Food. You can't beat a good soupy Red Beans & Rice. And Gumbo is also very good. The only thing you didn't try was Jumbolia. But the spices is just typical Cajun seasoning. Usually consists of fresh coarse pepper amongst other things.

It's really Louisiana Creole cuisine. Most dishes associated with Cajuns have their origins in Creole cuisine which is older. Cajuns adopted the dishes after they derived.

Red beans and rice is a dish traditionally enjoyed on Mondays. This is because Monday used to be laundry day way back when. A household would heat up a large amount of water to do all the laundry. They would take some of that hot water and cook the red beans and rice all day.

I like how genuine they are, I like they're chemistry, and I think she has a great personality and I would want to see more from her. She could host something small. Her voice is nice. If she was hosting a nature documentary or something, her voice would be a really great note in something like that.

The food in NOLA is incredible! And the people are fantastic. I would live there half a year there and half a year in Texas in a heartbeat if I could afford a little house in the French Quarter. I love the vibe, the music and the spirit. It's like no place else on Earth.

Whenever I make cornbread, I always stir some softened butter with a couple of teaspoons of locally harvested honey. It tastes fantastic on the cornbread and local honey is really good for people with hay fever and other seasonal allergies.
