Smoked Ham Burnt Ends Made On The Weber Kettle

- I've done Brisket Burnt Ends. Chuck Roast Burnt Ends. Pork Belly Burnt Ends. Pork Butt Burnt Ends. Today I'm taking things to a new level and making Smoked Ham Burnt Ends using a pre-cooked ham and some Cherry Wood smoke on the Weber Kettle.
Ham Glaze
1 1/2 cups Brown Sugar
5 TBSP Butter
6 oz BBQ Sauce
8 oz Honey

Never subscribed to anyone but you. Everything that looks good on a weber kettle is you. I give up. Love ham but tired of old cooked ham. Easter a few days away and cant wait to try this. Still cooking on my 25 yr old kettle 2,3 times a week but your recipes are so much needed for getting me out of the norm. Thank You

I’m still navigating the clean/dirty smoke issue but shouldn’t that last chunk of smoking wood had more time to properly combust before returning the meat to the grill?
The wood chunks on a kettle are actually smoldering once the lid is one, unlike fully burning in an offset. It's just the nature of smoking in a restricted airflow cooker. I've never had any issue with it affecting the taste.
Ham is another tough meat for me. If I were cubing it up, it would be hard not to be eating each piece I cut before making the next cut.
It's definitely an exercise in patience :)

You've just inspired me to try a Christmas themed flavor profile on ham burnt ends. I'm thinking a homemade pineapple bbq sauce, some pineapple juice w/bits of crushed pineapple for thickening some stone ground mustard with a tad bit of dijon mustard and a healthy splash of apple cider vinegar and just a small amount of either hot sauce or crushed tomato, maybe both?(I taste as I cook and go from there😁) With all those warm Christmas spices typically used on Christmas ham for the rub.

Great idea. They look awesome. I haven't used Famous Dave's in while the steak seasoning in my favorite of theirs. The mess basket is perfect for burnt ends have the same basket that I picked up at Walmart.
That basket is a great tool for cooks like this :)
There's no candy like pork candy. I suspect the ham would have been delicious at any stage once it was warmed up, but the build of flavors was awesome.

Why not use the slow and sear? Is the sns really worth the money?
I mix it up on the equipment I use, and this was a shorter cook. The SnS really shines on those 5+ hour cooks :)
