My biggest fan
You missed a couple of great hits that are extremely good as a starter: Carcassonne, 7 Wonders (or Sushi GO party), King of Tokyo, Mindbug, Samurai Sword (or BANG), Star Realms or Tanto Cuore (instead of Dominion).
I do like a lot of these choices, that's the problem with only being able to give 10 games! I could do another whole list with games that fit! I chose Dominion over star realms for its replayability, but I agree with star realms, great game!
Great video and stellar list for getting started! TM will definitely test those teaching chops, especially for new players. Perhaps something touch lighter to start? TM Ares Expedition is a bit more streamlined and forgiving while still capturing the similar principles. Or even something like Wingspan or Everdell?
Yeah Wingspan was the other choice for me here. I debated for a while on which one I would pick. I went with Terraforming Mars for personal preference and in my opinion a little more replayability! I appreciate the comment!

With your own words there are plenty games which would do the trick, but focusing just on two points, first: number of plays - this translates to enjoyment and replayability, second: complexity - then my choice is Brass Birmingham
Surprisingly I've never played! But it's high on my list to try
