今回はかなり硬度が高いZDP189を鋼材に使っている三枚合わせの牛刀を研ぎました。
ステンレスを砥石で霞仕上げにするのはけっこう難しいです😂
やはり硬い分研ぐのにも時間がかかりますが研げたらすごい切れ味です🔪

This time, I sharpened a three-piece chef's knife that uses ZDP189, which has a fairly high hardness, as a steel material.
It is quite difficult to finish stainless steel with a whetstone.
After all it takes time to sharpen the hard part, but if you sharpen it, it will be amazingly sharp 🔪
