    my mom always uses roasted breadcrumbs under the apples, they soak up the juices and prevent the strudel from getting soggy

      1 1/2 cups milk
      5 Tbsp sugar
      1 tsp corn starch
      1 vanilla bean (the pulp) or 1 tsp vanilla extract
      3 egg yolks
      1. Put the vanilla pulp (or vanilla extract) into a small sauce pan along with all the other ingredients.
      2. Slowly heat the mixture over medium high while constantly stirring until it coats the back of a spoon. (It should be slightly runny). At this point I like to strain the mixture through a sieve just to make sure that there aren't any lumps in the final product.
      3. Cover with plastic wrap so that no skin forms and put the sauce into the fridge to cool down.
      Serve and enjoy :)!!!!

    In North of Italy we eat it with apple and pine nuts. Put some crushed amaretto biscuits under the apples to soak the apples juice

    I prefer to make my strudel with phyllo pastry, much lighter and crisp. (5 sheets) I use a variety of apples for texture and flavour, and sultanas. I add pecan bits but mostly I make pear and cranberry strudels.

    Fun fact: Puff pastry, at least the commercial stuff you usually find in the frozen food section (Pepperidge Farms brand), doesn't actually contain butter. It uses a variety of vegetable shortenings and oils instead. I know, because I'm allergic to milk protein and can't eat dairy, but I can eat puff pastry.

      I know....for most of us thats sad, good for you though! I like to buy butter puff when i can, but usually call for the standard that most people can buy!

    @margaret winshell you are right, in the uk, we would call that an Apple turn over.
    A strudel has sultanas, and i believe the roll is different too.

    I am in England and make my strudels with our lovely tart English Bramley apples. I use much less sugar than Sarah because I love the tartness. No sugar on top either - except for a light dusting of powdered sugar. Healthier and fewer calories too!

    I'd imagine the technique of cooking the apples first might work well if using as a filling for a galette of some sort. I'd imagine this would be supremely delicious if made using a pate brisee.

    This recipe is absolutely foolproof and so easy to impress ☺️ although I prefer to scale back a little on the sugar. I've experimented and I feel that the best apples to use would be jazz apples. Fuji is a little bit too starchy for my liking, Royal gala is a good second, but trust me on using jazz 😉

      Another note, I do not recommend sprinkling sugar before you put it in the oven. My sugar burnt really badly. I usually save a little apple sauce from the cooking, glaze it while it has cooled down from the oven and sprinkle on some sugar

    Oh MAN I love apples, cinnamon, brown sugar, butter and flour in all its forms! YUM!
    OK I make quite a few of these types of recipes this time of year too. And as luck would have it picked up some puffed pastry yesterday so yeah!
    My question is about the browning (discolouring) of the apples once sliced and left out....who cares?? Does it change the flavour of that apple when it browns? 'cause all these types of recipes end up adding brown sugar and cinnamon that coats and makes the apples brown anyway. Just something that I wonder about, seems I always hear these warnings regarding the apples changing colour.

    You dont have to cook the apples for strudel. They will bake nicely in oven even if you add them fresh.

    Do yourself a huge favor, and roll this out on floured parchment paper. It WILL stick to your counter, no matter how much flour you use. It is not as easy as it looks in this video
