The temperature and even in this case the wind blowing from the window really affect how the ammonia evaporates, meanwhile i changed a bit, i prefer to spray ammonia and skip the 1st dip, just spray ammonia, leave it for a couple of hours, then spary again, leave for 1 or 2 hours, repeat until it has the ammo0unt of patina you are looking for, let it sit overnight to make sure everytthing has settled and that's it

If i remember correctly a bit over 2 sheets on each side, the initial idea of putting salt was to create a pattern on the patina by preventing the amónia to reach the spots covered with salt, ended up realising that it also helped forming patina
