For those who do not know Gary passed away in 2019 from a brain bleed whilst visiting family in Dubai UAE. There were quite a few young British chefs when Gary arrived on the scene and made my cooking a lot better than it would be otherwise. RIP Gary
Tried Gary's method this morning and it's great. Even though you're are not with us any more Gary you are still helping us to appreciate the art of cooking and encouraging us to be the best we can. .... a sad loss to the culinary world.

This great man is the reason I got interested in cooking, his Rhodes around Britain cookbook was and still is amazing. We had the privilege of eating at Mezzanine when it first opened in Dubai. Still one of the very best meals I’ve ever eaten. He will be sadly missed
Haha! My dad "taught" me how to cook an omelette about 45 years ago. I've never ever got one to turn out right. Now I know why: my dad said mix the "contents' (cheese, tomato, etc.) and the salt in with the eggs *and milk* in the bowl, then pour it all into the pan together and do not disturb it until it's set. About as opposite as it's possible to be! Tomorrow, I will eat omelettes until I burst.
Many restaurants do it like your dad (without the milk), and just leave it on low heat for a few minutes before putting it under a salamander for anothe few minutes. It's not a french omelet, but put some potatoes in it and you have a spanish Tortilla.
With no offence meant to the departed (RIP; i hv watched sm greats, and Mr Rhodes stands out amongst them both for his skills and attitude. Who likes a stuffed shirt, shouting bull, never mind the skills!) or to any living legend to newbies like me, there is absolutely nothing wrong to either adding salt early, or to adding a dash of milk, or to adding tomato early; i do that and still get similar results. 😊 Ummmm....more than one way to skin a cat, eh?
grew up watching him in the 80s he was the first pioneering tv male chef we saw, his famous trade mark was his handsome looks and spiky hair, he was always very down to earth even in the 80s what a lovely soul he was .I didnt even know that he had moved to Dubai permanently until i heard he passed away RIP

Rhodes never says that you have to imitate his choice of flavorings; in fact, he says the opposite. Which is one more reason why this video belongs in the Gods of Cooking Eternal Hall of Fame.) Back in the day he had really cool spiky hair and a bubbly, enthusiastic personality. Above all he had a real passion for the dishes he cooked and that came across wonderfully. I have great memories of him on Ready, Steady, Cook in the early nineties which is curious because he's not listed as ever having been on the show. It's funny how your mind plays tricks on you. An all round gent and sadly missed...

I may be wrong but I think Gary was working at the Grosvenor House in Dubai when he passed away. Always enjoyed his shows and seemed a genuinely nice guy.
I made this omelette and it was truly delicious! And I found it refreshing that he's given us a method for making the omelette in a more relaxing manner. Thank you Gary!

You absolutely should add salt to the eggs before cooking, it produces a more tender egg.
The eggs taste so much better when you add the salt at the end. Especially if you whisk them properly
