The person you employee at the church is not the pastor. The Pastor is automatically assigned to the church by the Pope. The person you employee there is a gravedigger. The gravedigger uses stone to make gravestones. So when you upgrade the church, if you have a gravedigger employed at the church, then he steals the stones delivered to the church for construction to build grave stones, so the church never upgrades. This is a bug the dev knows about and will be fixed for launch on April 26th.
The pasture is where the sheep live, the sheep farm is the person who tends to the sheep and sheers the wool in the spring. So if you have no one employed at the sheep farm then you won't get the wool. It works like the farm. You can lay out a farm field with out placing a farm house, but then there will be no one employed to tend the field. You got the sheep from the animal trader. You put in an order for 2 sheep so you bought one and it was delivered. When you get enough regional wealth the trader will buy the second one.
When you build the artisan extension on a burgage plot, every person in that family becomes employed in the artisanal job. So that family is removed from your labor pool. In addition, if you have a side house on that plot, the second family is also employed in the artisanal job so they also are permanently removed from your labor pool. So be careful with how many plots you build the artisanal workshops and which ones. Additionally the artisanal workshops will require raw resources for their production. So if you can not provide the correct raw resources, they will not produce anything, but also not be able to supply workforce to the labor pool.

The goat extension on a burgage plot provides hides that you can convert to leather with a tannery. Oddly enough, the goats do not provide milk.

The Manor and the walls will be upgradable in the final release. So that won't be a DLC, it will be in the base game. You can build a basic wall around the base level manor house as is.

You can do trade, just click on the tradepost and activate a trade route. It will cost you money to do this and each time a trade route gets bought, the money to activate a traderoute will increase.
That's were the developmont point for trade route is for, to lock the cost to activate a trade route to 25, so it will not increase more and more.
