  • ✓ London Tiffin Service Documentary: I've been following the "Tiffin Planet" guys on Instagram for quite a while now so it is long overdue that i finally made a visit to record some kitchen cooking action.
    In this video Head Chef Sunil kindly shows us how he makes his restaurant's versions of 3 different curries: a Punjabi Kala Chana Curry, Matar Paneer Curry and a Green Mung Bean Daal.
    KALA CHANA CURRY (BLACK CHICKPEAS) RECIPE INGREDIENTS:
    * Vegetable Oil (Tel)
    * Boiled Black Chickpeas (Kala Chana) Pre-soaked overnight
    * Salt (Namak)
    * Ajwain
    * Tumeric Powder (Haldi)
    * Chopped + Sliced White Onion (Dungri)
    * Whole Cumin Seeds (Jeera)
    * Ginger and Garlic paste (Adrak / Lasan)
    * Chopped and blended Tomatoes (Tamata)
    * Garam Masala
    * Cumin Powder (Dhana)
    * Coriander powder (Dhania)
    * Red Chilli Powder (Lal Mirchu).
    * Turmeric (Hurad)
    * Salt (Nimak)
    * Onion sauce / gravy
    * Water (Pani)
    * Special Channa Masala Powder
    * Concentrated Tomato Paste
    * Dried Fenugreek Leaves (Kasoori Methi)
    MATTER PANEER RECIPE INGREDIENTS USED:
    * Vegetable Oil
    * Ginger and Garlic paste
    * Tomato Gravy
    * Peas
    * Red Chilli Powder
    * Salt
    * Turmeric
    * Garam Masala
    * Cumin Powder
    * Coriander powder
    * Onion Paste /Gravy
    * Paneer Cubes (marinated in a Tomato Sauce)
    * Dried Fenugreek Leaves
    MUNG (MOONG) BEAN DAAL RECIPE INGREDIENTS USED:
    * Dry Mung Beans
    * Water
    * Salt
    * Red Chilli Powder
    * Turmeric
    MUNG BEAN TARKA:
    * Vegetable Oil
    * Cumin Seeds
    * Chopped + Sliced White Onion
    * Finely Chopped Garlic
    * Salt
    * Chopped and blended Tomatoes
    * Garam Masala
    * Coriander Powder
    * Turmeric
    * Red Chilli Powder
    * Water
    Served with the tiffin is a choice of Tawa Chapati (Roti) / Boiled Rice
    Also being served up in the Tiffin on the day of my visit was:
    Green Beans Masala and Palak Paneer.
    I am in awe of the epic / fast & speedy onion Chopping skills that Chef Sunil has as seen at 3:24 & at 20:26
    The "Master Head Chef" here makes it all look very easy, but it takes many years of practice and skill to get to this level of cooking.
    As you probably know by now, we absolutely love Desi places like this, a place serving delicious restaurant quality, home cooked food; but at very affordable street food prices!!!

      I live in hounslow East but never seen it .thats my fault though I ve been to a afgani rest in hounslow central for afgani pillow rice

    Have you found out when cooks decide to use Cumin or Coriander seed vs powder? What’s the difference and when does one make more sense than the other (and when should you use seeds and powder together)? Just curious after watching so many of your videos.

      I think the powder can be more subtle and the whole seeds give more cumin taste every time you bite on a cumin seed.
