Ingredients:
500g dried tortelloni
4 tbsp green pesto
75g sliced sun-dried tomatoes
Sofrito:
2 onions
3 celery sticks
2 carrot
2-3 tbsp olive oil
'Meat' Sauce:
250g vegemince
sofrito
1 tbsp dried Italian herbs
1 tbsp veggie 'chicken' stock powder
1 400g tin chopped tomatoes
1 tbsp dark soy sauce (optional)
salt to taste
Cheese Sauce:
2 tbsp oil
1/4 cup flour
500ml milk
150g grated cheese
120g grated Grana Pedano
1/2 tsp black pepper
1/2 tsp salt
Topping:
grated cheese
sliced tomatoes
Serving Suggestion: Serve 'as is', or with salad and garlic bread.
I have questions! Does pesto taste good with the veg purée? And how does that taste with the cheese sauce?? I need more info on what it tastes like! It looks cool to make though.
It tastes really good. The flavours come together so well. The pesto adds a herby freshness that stops the richness of the cheese becoming overwhelming. 👌
