- Individual Mushroom Bean Pies These can be Vegetarian / Vegan if you sub miso for the Worcestershire sauce - Glen And Friends Cooking
Welcome friends welcome back to the kitchen. A couple weeks ago I made some steak and mushroom pies; I baked some meat pies right away, and some of them we put in the freezer un-baked and baked the pies later. While I was making those meat pies I mused that they would probably be pretty good even if you left the steak out, and upped the amount of mushroom and used beans instead of meat... So today that's what I'm going to do, and I don't have a veggie pie recipe I am flying blind here. I'm taking a method of meat and vegetable pie recipes that I know work and I've assembled some vegetables and mushrooms here that I think I'm going to throw into the pan and we'll see what kind of flavour and texture we come up with. So no vegetable pie recipe completely blind moving on instinct. this could be a completely vegetarian recipe or vegan recipe, if you leave out the Worcestershire sauce and egg wash. Give this Vegetarian Pot Pie a try!
Ingredients:
15 mL (1 Tbsp) oil
1 onion, diced
2 ribs celery, diced
1 carrot, diced
300g mixed mushrooms, diced
10 mL (2 tsp) thyme
10 mL (2 tsp) summer savoury
45 mL (3 Tbsp) tomato paste
30 mL (2 Tbsp) Marmite
500 mL (2 cups) stock / broth
250 mL ( 1cup) white wine
Salt & pepper to taste
2 - 540 mL (19 oz) cans beans
15 mL (1 Tbsp) Worcestershire sauce (Leave out if Vegetarian / Vegan and replace with Miso)
250 mL (1 cup) frozen corn
250 mL (1 cup) frozen peas
1 batch double crust pie dough
Egg wash (Leave out if Vegan)
Method:
In a large fry pan, heat some oil over medium high heat, and sauté the onion, celery, and carrot until soft.
Add in the mushrooms and continue to sauté until the mushrooms have released their liquid and the pan is almost dry again.
Stir in the thyme, savoury, tomato paste, Marmite, stock, white wine, beans and Worcestershire sauce.
Reduce heat to a simmer, cover and simmer for about an hour.
Stir in the frozen corn and peas, and allow to cool slightly while you roll out the pastry.
A double crust pastry recipe will line and cover 6 (5” x 1.25” / 3cm x 13cm) individual pie pans.
Fill and seal the pastry, egg wash those that you will bake today, and freeze the rest.
Bake for 20 minutes in a preheated 230ºC (450ºF) oven, then reduce temp to 180ºC (350ºF) and bake for 45 minutes more - or until pastry is golden brown.
The frozen pies can be baked from frozen by adjusting the time slightly.

For several years we had a canning business where we took the seconds from local small farmers to make a variety of products. Reduced food waste, gave the farmers another income stream, and have summer veggies all year long.

Some Walmarts often place discounted produce on rolling racks that are either imperfect or in store non advertised specials.

Go to the section with sliced canned fruit and vegetables or juiced. Its all there.

We've bought that "naturally imperfect" produce from the Superstore for so long now that I have no idea what the price of the regular stuff is haha
Do all Superstores have an imperfect section? I don't recall it in Milton, but maybe haven't really looked recently.
As a vegan I really appreciate videos like this Glen! You've taught me a lot about cooking but naturally I have to make alterations to your dishes. It's always nice to see chefs teach people that you don't need animal products in every meal for it to be healthy and tasty :)

also, a decent vegan replacement for egg wash is a cornstarch slurry, 2 parts water to 1 part starch, microwaved until it becomes a bit gelatinous
+1 for this egg wash replacement.
That explains the use of the white wine!
Also vegetable oil, grain or nut milk, maple or sugar syrup - or a blend of them all!

Supermarkets near me no longer have the display of past perfect produce, they donate all of it to food charities, soup kitchens, etc. Same with day-old bakery. I miss that! It saved me lots of money, but I'm OK with it if it goes to someone who needs it.

I use Marmite in my savory cooking all the time! Definitely gives that meaty umami experience that I love.

I suspect that most people who dislike marmite on toast simply use too much. Use a very light spreading to produce a wafer thin layer and then it gives a salty flavouring, not an assault on the taste buds. Do not spread it like jam or peanut butter!!!

I love Marmite on toast, with loads of butter. Also great with a fried egg on top.
And here's another way, with a poached egg on the toast with Marmite or vegemite. I had a Dutch workmate in Australia tell me it was the best combination. I was disbelieving till I tried it and years later, still love it. Give it a go!
Somehow I love it that they make Rice Krispies Treats with some frequency.
This show makes me happy. You cook like I cook. I almost never use recipes, and if I do, it is simply to get an idea of the seasonings, cooking temperatures, and general portions. This would be a great base for a deep Cajun seasoning as well--green peppers, onions, celery, black-eyed peas and maybe tasso ham...oof.
I LURVE Vegemite on toast, impossible to buy now in Canada. This dish looks great....any dish with beans is great! Thanks for the recipe and video.

I can find Vegemite here in Toronto - Vegemite isn't as common as Marmite, but it's available.
I was looking for both here in Ottawa for months before I grabbed a tiny jar of Marmite at the Real Canadian Superstore. I can't find Vegemite anywhere.
I am an Aussie living in the US and I’ve found I can buy Vegemite on Amazon !!! About twice the price as in Oz but cheaper than a flight home 😂

I love crumpets, but I haven't had any in ages. I finally found some at "the Real Canadian Superstore" that sells naturally imperfect vegetables. I've been holding back on trying it because it's a tiny jar and I don't want to waste it. I'll have to pick up some crumpets and try it. If I understand right, you toast them and then put a tiny bit of marmite on the crumpet?
Agree could just do with some marmite in toast. What is it with other countries not understanding the amazing flavours.
As I st there are those that like marmite and those who are wrong.
I love Superstore too. When I can do it, I love to do a mix of mushrooms. I know that I've made the same comment before, but dried mushrooms add a lot too. I always have at least some dried Shiitake Mushroom in the pantry. King Oyster mushrooms are another fresh mushroom that I buy a lot.
Looks great. We have “wonky” veg here in the U.K.
It's nowhere near a quarter of the price though, maybe about half to two thirds

Shitaki mushrooms have natural inferon so those are always good to have in a mix of mushrooms. It may be a bit eaiser to add the salt earlier, because that will help to remove moisture from the mushrooms, and it helps to do that with the carrots, onions and celery. If anyone likes morels, there is a great video here where a guy took the ends and put in some soil material to grow the mycelium and then mixed it in a good amount of water and watered areas in his yard. The next year he got tons of morels.

I can recommend a Yorkshire version of Worcestershire Sauce: Henderson's Relish, that is both tastier than regular Worcestershire sauce AND vegetarian!

In Australia, the land of the meat pie, nearly all pies use mince. So to veganise it, I just sub it for TVP. All other ingredients stay the same. Perfect alternative.
The best pie I make though has mince seasoned for nachos or tacos, refried beans, salsa and “cheese” sauce.
It’s nachos in a pie.

In the US we do not have a imperfect sections for fruits and vegetables that are not pleasing to the eye but still perfectly good wish they did because those vegetables and fruits are perfectly fine but they are then tossed and you know once they're tossed you know where they go it's such a wasteful thing...so glad that some of your markets have this option.!

Love the little individual pies! Must try the steak and mushroom version but the mushroom and legume sound interesting. I don't have access to the "less than perfect" produce section but that's a great idea. Less food waste and if you're chopping it all up I don't think anyone would be the wiser when serving it at the table. Love your CZcams Channel.

@@christopherwhitehead8946 that's incorrect, not all are vegetarian/vegan. If you get the one that clearly says beef on the front of the jar, it's about 50% beef extract and still tastes lovely. They did change the recipe back in the mid 00s but reverted back to using beef a couple of years later it seems.
@@chexitout Well, that’s good news. It was the outbreak of Mad Cow disease that led to the paradox that is Vegetarian Bovril, I believe. Unfortunately in New Zealand all the imported Bovril here is still the vege version, and we don’t make it locally. Shame, since we never had Mad Cow out here. All our cattle is grass-fed, so there’s no chance of prion-contaminated cattle feed here.

Great inspiration for a vegetarian pie . . . I'd think rinse the canned beans in a colander with some cold water before using to reduce the salt.

Hint,
Cut both ends out of the tomato paste can, slide the top lid sideways to clean it off and push the bottom lid through to the top. Normally you waste very little tomato paste and a minimal amount of mess... It also makes it very easy to crush the can and makes the recycling bag last a lot longer...

That looks really good. I'm a vegetarian, and I think the original meat pie would also work with something like textured vegetable protein (TVP) in place of the meat. Make sure to flavour the TVP well. And thanks for making me laugh a couple times: I needed it.
Some philosopjical things being discussed there :-). I noted that you mentions "homemade Worcester Sauce". Interesting although a bottle lasts me quite a while. I have no idea why Marmite still makes it because I have a jar from which I use a smear on toast now and then and it may be past on in my will.
This certainly looked interesting. I have the opposite philisophical problem to you in that I have four individual pie dishes. I will solve the conumdrum.

My gran in his wisdom used to marmite the beef joint before cooking that was the only redeeming feature of a whole lifetime and my only positive memory of her/him.
We have a serious problem when it comes to food. The imperfect is just has perfect has the photo-ready food. I love being able to take something someone might turn their nose up and make into something they would never know. Hunger is the best influencer of all time.
You mentioned not eating Marmite on toast. I wouldn't have done that either, until I tried just a very small amount with a large amount of (good) butter applied beforehand to the toast. I had just a touch on a fresh bagel on a cold day in Seattle once which has stuck in my memory.
I would love it if our local grocery stores would have the naturally imperfect veg available for purchase.
small tip, add some water in the almost empty can of tomato sauce to fully clean it out and add it to the stew, also thyme goes really well with mushrooms and beans
In the UK our supermarkets call it Wonky carrots, mushrooms etc, etc and I always buy them. If they are to be chopped up who cares? Love my Wonky veg 🥰

This is my type of cooking because that's what happens a lot. I want to use what flavors I think goes with whatever I'm cooking. And that's why I'm trying to build my seasoning storage and have many spices and herbs and such.
I get those mushrooms for my stock!
"Naturally Imperfect" just looks like real food! 😂 So weird to think of all the work that goes into growing something only to discard it becasue it looks natural.
Mushroom Soy supports the mushroom flavour (obviously) and adds a wonderful savoury taste!

I very much enjoy beef (ribeye, cooked over charcoal is my favorite), but my go-to non-meat option always involves mushrooms for the satiation/umami and beans for the full/satisfied feeling.
Oh Glen, now you're going to need to show us how you make the butter for those rice crispy squares. 😉
Similar to Mushroom Wellington, which adds cheese and spinach instead.
We can't get 'naturally imperfect' produce here in Chicago- at the stores here if it isn't 100% perfect they throw it away.

I would add some cubed potatoes, Red Door Asian fish sauce. and a bit of Pick-A-Pepper sauce.
And now I'm going to do this with Bombay Potatoes and tomato chutney as a top layer.
I'd toss green pepper in the mix too. Then again, I live around Louisiana.
Marmite is lovely if you don't slather it on bread or toast because it would be far too strong and not nice. Smear it sparingly over grilled cheese on toast and it is fab. Always use it for the base of gravies and sauces.
My circular cycle is eggs, mayo, mustard and bread for egg salad sandwiches.
OK, Glenn, now I need to buy some Marmite. :)

I can't say that I've ever cared about the appearance of my mushrooms. They always get chopped and/or cooked to death.
