Best Snack Ever - Cajun Boiled Peanuts in a Slow Cooker

  • Boiled Peanuts are a go to snack in a lot of cultures, the American South - where you'll find them in gas stations, the Philippines, Thailand, China, Vietnam, Ghana and other African countries.
It's a delicious snack you can make at home simply by putting them in a crockpot and keeping it going for at least 24 hours to soak in the spice and soften up. It's low effort but the results pay off.
Give this recipe a try and you won't regret it.
In a 6 QT slow cooker:
Wash and rinse 2.5 lbs of in shell raw or green peanuts
Fill the pot with enough water to cover the peanuts
    Add spices:
    1/2 C Kosher Salt
1 Bag of Zatarain's crab boil or other boil mix
    2 T Chile powder
    2 T Black pepper
2 T Cayenne (dial back if you don't like spicy)
    2 T Crushed Red Pepper
Turn the pot on high, generally 4 hours, then 10 hours overnight, make sure to add water when needed and taste to see if you want to add more spices. Let them go for about 24hrs like that.
They can either sit in the crockpot for a day or two on warm if they last that long, or can be sealed up with a bit of the juice for 3-4 months in the freezer in a ziplock bag, reheat in the microwave.

I've tried raw peanuts without much satisfaction. They're uncooked, but dried peanuts, and they don't seem to ever soften up like a good boiled peanut should. What you want are GREEN peanuts. They're also uncooked, but they're not dried.
At least, that's the case in my experience and in my neck of the woods. If you're using raw peanuts, that probably explains your really long cook times (overnight or up to 24 hours). On the other hand, sometimes raw is all that's available.

    • @PicklesBBQandCooking
      @PicklesBBQandCooking  Před rokem

Yep, could not agree more. Green peanuts are the way to go but unfortunately where I am now, it’s impossible to find and shipping some would be pricey. I figure most people are stuck in the same situation but I should have mentioned that more.
Alas, until I live where they’re available, this is my fate. On the other hand no matter where you live, there will be something that’s hard to find. Such is life. Hah. Have a great one and glad you know boiled peanuts!

I had a hard time finding a good boiled peanut so I started doing my own in a crock pot.... with a kick. I only use green peanuts when in season. August to November in my area. I actually pick out the “wet” or peanuts with the most moisture.
    Green peanuts
    Salted water,
    8-10 or so whole jalapeños
    That’s it.
I let them cook overnight, 10-12 hours. The next morning I scoop the jalapeños out into a small bowl and squeeze the juice with a slotted spoon back into the pot and stir. So good you want to sip the juice. They smell so good.
With a crockpot, you don’t have to add water like you will if you hard boil them.
