Tender Beef Stew with Peas and Carrots| Beef with Dark Beer

  • In the cold weather, we all need a warming and tasty meal, just like our beef and vegetables stew. The beef is very tender and juicy, and the carrots and peas melt in your mouth.     Ingredients:
    - 1 kg beef meat;
    - 40 g. butter;
    - 500 g. carrots;
    - 1 sprig of leek;
    - 1 stalk of celery;
    - 2 tbsp. flour;
    - 1 cup dark beer;
    - 800 ml. beef stock;
    - 1 can chopped tomatoes;
    - 3 bay leaves;
    - fresh thyme;
    - fresh rosemary;
    - 200 g. frozen peas;
    - olive oil;
    - salt;
    - black pepper.
    Instructions:
    Cut the meat into cubes. Season it with 40 ml. olive oil, 2 tsp. salt and 1 tsp. black pepper. Roast it at 180C/356F for 15-20 minutes. Chop the vegetables roughly. Heat in a frying pan at medium temperature 2 tbsp. olive oil and the butter. Fry the vegetables until golden and add the flour and then the beer. After it has reduced, add the tomatoes, bay leaves and fresh spices. Finally, pour the stock and meat, stir, put the lid on and roast in an oven at 150C/302F for 4 hours. If you don't have a fireproof pan, you can leave the dish on a low heat for 4 hours, stirring often. After the dish is ready, add the peas and stir.
